- Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.

Ready, Set, Cook! Special Edition Contest Entry: I did this first to see how the kids would like it. This is, to me, a Potato Skin/Baked Potato recipe combined. There are so many ways to do this but I decided to make this one basic & simple to start with. You can always add different items, such as broccoli or chili or stuff like that. I made it into a casserole so it can feed more people. Great for large family gatherings or events.

- Butter bottom & sides of casserole dish.
- Press Simply Potatoes Shredded Hash Browns along the bottom of the casserole dish, lightly salt & pepper potatoes.
- Sprinkle Cheddar Cheese and Bacon all over the shredded hash browns (do not mix). Use spray butter & lightly spray entire ingredients. Bake in oven at 350* for 15 minutes, then broil for the last 3-5 minutes or until golden brown.
- Remove from oven, let cool to the touch. While still warm, spread sour cream over entire ingredients, covering completely. Sprinkle with Cilantro and Garlic Powder, Paprika, Salt & Pepper to taste. Next add roughly chopped Red Bell Peppers and Green Onions. Once covered with those ingredients, use Simply Potatoes Diced Potatoes with Onion and layer covering entire ingredients. Lightly spray-butter potatoes. Then sprinkle lightly over diced potatoes with the remaining bacon, cheddar cheese & chives.
- Bake approximately 40-45 minutes and cheese turns a golden brown.

BAKED POTATO SKINS

- Prick the potatoes a few times with a fork and bake them in the middle of a preheated 425°F. oven for 1 hour. Let the potatoes cool, halve them lengthwise, and scoop them out, leaving a 1/4-inch shell and reserving the potato pulp for another use. - Wash potatoes and bake in 350 degree oven for about an hour. Do not prick the potatoes. Remove from oven and cool.
- Slice potatoes in half lengthwise and scoop out the soft insides with a spoon. Get as much out as possible without puncturing the skin. Spray both sides of the skin with non-fat cooking spray and season with salt and pepper.

- Wrap potatoes in aluminum foil and bake at 400 degrees for approximately 45 minutes, or until tender.Let potatoes cool. When cool, cut potatoes in half lengthwise. Use a spoon to scoop out most of the soft center and place in bowl. Set aside.

- 1. Wash large potato then set aside to dry
- 2. Preheat oven 400 degrees 15 minutes
- 3. wrap each potato in aluminum foil
- 4. Place potato in oven-Bake at 375 degrees for 2 hrs.

- 6. Cool 10 minutes then scoop out softened potato leaving 1/8 skin for baking crisp

- 11. chop fresh chives with very small scallion slices set aside for topping
- 12. Microwave whole garlic according to size between 8-12 seconds. Careful not to cook into a mash as you want this garlic for slicing small
- 13. peel away skin of garlic then run cold water to cool immediately to stop the cooking process
- 14. grate garlics into slices
- 15. place garlic slices & 1/2 of the thin sliced scallion on pan with space in between
- 16. Bake on 350 degrees for approximately 10 minutes
- 17. While baking garlic slices top potatoes mixture with fresh chives and season with sea salt, cayenne pepper, black pepper, and paprika
- 18. Remove garlic toasties from oven then cool and press to crunch into crunchies for topping-top with toasted scallion slices for both taste & presentation
