1 c sugar
6 Tbsp flour
2 c sharp cheddar cheese, shredded
2 (20oz) can(s) pineapple tidbits, crushed or chunks, (drain and reserve juice)
1 c cracker crumbs (recommended: ritz or townhouse)
1/2 c (1 stick) butter, melted
6 Tbsp reserved pineapple juice
a sprinkle of cinnamon (if desired)

Steps:

  • 1. Preheat the oven to 350'F. degrees F. Grease a medium-size casserole dish with butter.
  • 2. In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish. (I spray it with Pam)
  • 3. In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice and cinnamon, stirring with a rubber spatula until evenly blended (should be a little wet & crumbly.) Spread over the top of pineapple mixture.
  • 4. Bake for 25-30 minutes or until golden brown. Serve hot out of the oven. Oh Yummm!
