PINEAPPLE GLAZE FOR BAKED HAM

Pineapple Glaze for Baked Ham image

Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

Categories     Sauces

Time 15m

Yield 2 cups, 4-6 serving(s)

Number Of Ingredients 6

1 cup brown sugar

1 tablespoon cornstarch
1/4 teaspoon salt

Steps:

  • Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
  • Turn heat on to medium and stir constantly to prevent burning.
  • Continue to heat until mixture thickens and comes to a boil.
  • Allow mixture to boil for approximately 1 minute.
  • If mixture refuses to thicken, add more cornstarch- a little at a time.
  • (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.

PINEAPPLE BAKED RICE (MAIN COURSE FOR CHINESE NEW YEAR)

Pineapple Baked Rice (Main Course for Chinese New Year) image

Pineapple baked rice uses a pineapple skin as a bowl, stuffing it with fried rice. After you bake it for 15 minutes, the pineapple flavor will go into the rice and your whole house will be filled with pineapple aroma! This is great for kids. It has vegetables and a light, sweet taste. You may add cheese on top of the rice if you like. I personally don't like to add cheese, I want to keep the dish simple and original. I serve it as a main course for Chinese New Year.

Provided by Tao,RN

Time 1h5m

Yield 4

Number Of Ingredients 10

1 link Chinese sausage, thinly sliced
¼ cup finely chopped carrot
¼ cup finely chopped onion
¼ cup green peas
¼ cup corn

  • Rinse jasmine rice and place in a rice cooker with water. Cook rice according to manufacturer's instructions, 15 to 20 minutes.
  • Preheat the oven to 300 degrees F (150 degrees C).

Add onion, peas, and corn; stir-fry until onion softens, 3 to 5 minutes. Add 1/2 of the rice; stir well to combine. Mix in remaining rice. Add egg pieces and sausage slices. Mix in pineapple cubes evenly.

BAKED PINEAPPLE

Baked Pineapple image

To make this easy yet impressive-looking dessert, peel a whole pineapple, stud it with cloves, and roll it in brown sugar and pepper. Then, just bake it low and slow. Serve it à la mode with our caramel pan sauce and a sprinkle of flaky salt-tiki torches optional. For a royal treat and swoon-worthy presentation, leave the crown on the pineapple.

Provided by Riley Wofford

Categories     Food & Cooking     Dessert & Treats Recipes

Time 1h30m

Number Of Ingredients 8

1 ripe pineapple, peeled (optional: keep green top intact, see cook's note)
2 teaspoons whole cloves
1 cup packed light-brown sugar
1/4 teaspoon freshly ground pepper
6 tablespoons unsalted butter, cubed
1/4 cup heavy cream
Vanilla ice cream, for serving
Flaky sea salt, for serving

Steps:

  • Preheat oven to 325°F. Pierce pineapple all over with cloves. Place sugar and 1/4 teaspoon pepper in a 2-quart baking dish; roll pineapple in sugar to coat. Scatter butter in pan.
  • Bake, brushing pineapple with sugar-butter mixture occasionally, until very tender, 1 to 1 1/4 hours. Transfer pineapple to a cutting board; remove cloves.
  • Place sugar mixture from dish in a saucepan with cream. Simmer until thickened slightly, 6 to 8 minutes. Quarter pineapple lengthwise; serve with vanilla ice cream, pan sauce, and sprinkles of flaky salt and more pepper.

Tips:

  • Choose ripe pineapple: To ensure the best flavor and texture, select pineapples that are ripe and fragrant. Look for fruits with a deep golden color and slightly soft but firm flesh.
  • Use fresh pineapple: Fresh pineapple is the best choice for this recipe. Canned pineapple can be used if necessary, but it may not have the same flavor or texture as fresh fruit.
  • Prepare the pineapple properly: Before baking, remove the skin and core of the pineapple. Cut the flesh into bite-sized pieces or slices, depending on your preference.
  • Season the pineapple: To enhance the flavor of the pineapple, toss it with a mixture of brown sugar, cinnamon, and nutmeg before baking. You can also add other spices or herbs, such as ginger, cloves, or cardamom, to taste.
  • Use a baking dish that is large enough: The pineapple pieces should be spread out in a single layer in the baking dish to ensure even cooking. If the pieces are crowded, they will not cook evenly.
  • Bake the pineapple at a moderate temperature: Bake the pineapple at 350°F (175°C) for 30-45 minutes, or until the pieces are tender and caramelized. Check the pineapple occasionally to make sure it does not overcook.

Conclusion:

Baked pineapple is a delicious and versatile dish that can be enjoyed on its own or as a side dish. It is a great way to use up leftover pineapple or to add a touch of sweetness and flavor to a meal. With its simple ingredients and easy preparation, this recipe is a perfect choice for both beginners and experienced cooks. Serve baked pineapple as a dessert, snack, or side dish, and enjoy its sweet and tangy flavor.
