BACON AND PEAR BITES

Categories     appetizer

Time 1h30m

Yield 30 pieces

Number Of Ingredients 11

1 pound bacon, chopped
1 Vidalia or sweet onion, chopped
Salt and freshly ground black pepper
1 tablespoon unsalted butter
2 pears, peeled, cored and diced
1/2 cup raisins
2/3 cups walnuts
2 boxes frozen mini filo shells, defrosted (15 each)
1/2 cup orange juice
1/4 sugar
1/4 cup honey

Steps:

  • In a skillet, fry the chopped bacon until crisp then transfer with a slotted spoon to a paper towel lined plate. In the same skillet saute onions, adding a sprinkle of salt and pepper to season. Remove the onions with a slotted spoon, and pile over the bacon.
  • Using the same pan, add the butter and let it melt, but not brown. Stir in the pears and saute over medium-high heat to slightly brown, but remove before they become soft, about 5 minutes.
  • Transfer the pears to a bowl and add bacon, onions and raisins; set aside.
  • With a paper towel, wipe out the pan and add the walnuts. Stir and toss the walnuts to toast them and then remove when they become fragrant. Cool slightly, then chop and add to the bowl with the pear mixture.
  • Put the mini filo shells in the cups of 2 mini cupcake pans. Add 1 teaspoon of the bacon mixture to each shell.
  • In a saucepan over medium-high heat, add the orange juice, sugar and honey. Bring to a boil then lower the heat and cook until it reduces and becomes slightly thick, about 10 minutes. Pour 1 teaspoon of syrup over each cup and allow it to soak in, then repeat with another teaspoon.
  • Refrigerate at least 1 hour or overnight. Serve at room temperature or serve warm by putting the pans in a preheated 250 degree F oven, about 20 minutes. Transfer to a serving platter and serve.

BAKED PEARS WITH SAUTERNES CUSTARD SAUCE

Baked Pears with Sauternes Custard Sauce image

Categories     Dessert     Bake     Raisin     Pear     White Wine     Winter     Gourmet

Yield Makes 8 servings

Number Of Ingredients 9

8 firm-ripe Bartlett pears
1/2 cup raisins, chopped
1/2 cup packed light brown sugar
1/2 teaspoon finely grated fresh orange zest
1/2 teaspoon finely grated fresh lemon zest
1 cup plus 2 tablespoons Sauternes or other white dessert wine
6 large egg yolks
1/4 cup granulated sugar
Accompaniment: Madeleines

Steps:

  • Preheat oven to 375°F.
  • Peel pears, leaving stems intact, then core from bottom using a melon-ball cutter or a sharp small knife. Stir together raisins, brown sugar, zests, and 2 tablespoons Sauternes and fill pear cavities with mixture. Stand pears upright in a buttered baking dish just large enough to hold them and pour remaining cup Sauternes over pears.
  • Cover dish tightly with foil and bake in middle of oven until tender, 30 to 40 minutes. Transfer pears to a serving dish or plates using a metal spatula to hold filling in place and pour cooking liquid through a sieve into a bowl.
  • Whisk together yolks and granulated sugar in a large metal bowl and add hot cooking liquid in a stream, whisking constantly. Put bowl over a pan of barely simmering water and vigorously whisk, or beat with a handheld electric mixer, until mixture is tripled in volume and registers 160°F on an instant-read thermometer, 3 to 5 minutes.
  • Serve pears warm with sauce.

Tips:

  • Choose the right pears: Use firm, ripe pears that are not too soft or mushy. Bosc, Anjou, or Bartlett pears are all good choices.
  • Peel the pears if desired: You can peel the pears before baking them, but it is not necessary. If you do peel them, be sure to remove the core and stem first.
  • Use a variety of spices:Cinnamon, nutmeg, and ginger are all classic spices that pair well with pears. You can also add other spices, such as cardamom or cloves, to taste.
  • Sweeten the pears to taste: The amount of sugar or honey you add will depend on the sweetness of your pears. Start with a small amount and add more to taste.
  • Bake the pears until they are tender: The baking time will vary depending on the size and ripeness of your pears. Check them frequently with a toothpick or skewer to make sure they are done.

Conclusion:

Baked pears with raisins is a delicious and easy dessert that can be enjoyed year-round. With just a few simple ingredients, you can create a dish that is both elegant and comforting. Serve baked pears with a dollop of whipped cream, ice cream, or yogurt for a truly special treat.
