Time 1h

Yield 6 servings

Number Of Ingredients 4

2 bunches kale, washed and dried well (preferably using a salad spinner)
3 tablespoons grapeseed oil
1 teaspoons kosher salt
1/4 cup finely-grated Parmesan cheese

Steps:

  • Preheat the oven to 325 degrees F. Adjust one oven rack to the upper-middle position and the other oven rack to the lower-middle position.
  • Remove and discard the ribs from the kale, then slice each leaf in half. In a large bowl, toss the kale with the oil and salt until evenly coated.
  • Divide the kale among 2 baking sheets, making sure they are in a single layer and not overlapping. Sprinkle the Parmesan cheese over the kale. Set the baking sheets on the oven racks and bake, switching the baking sheets from bottom to top and top to bottom midway through baking, until the kale shrinks in size, about 20 minutes (it may not be completely crispy at this point, but as it cools it will crisp up).
  • Allow the kale chips to cool completely and crisp up before serving.

Time 25m

Yield 6 servings

Number Of Ingredients 4

1 large bunch flat-leaf kale
Good olive oil
Kosher salt
Freshly grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F. Line 2 sheet pans with parchment paper.
  • With a sharp knife, remove and discard the hard rib from the center of each leaf, leaving the leaves as intact as possible. Place them on the sheet pans, drizzle or brush them with olive oil, and toss to coat lightly. Sprinkle generously with salt and bake for 10 minutes, until crispy. Sprinkle lightly with Parmesan cheese and bake for another 5 minutes. Cool and serve.

Tips:

  • To ensure crispy kale chips, opt for fresh, not wilted kale leaves.
  • Thoroughly wash and dry the kale leaves to prevent soggy chips.
  • Remove the stems from the kale leaves for a more tender chip.
  • Use a large baking sheet to avoid overcrowding the kale chips and ensure even cooking.
  • Drizzle the kale chips with olive oil and sprinkle with parmesan cheese and seasonings before baking.
  • Bake the kale chips at a high temperature for a shorter duration to achieve a crispy texture.
  • Keep an eye on the kale chips during baking and remove them from the oven once they turn crispy to prevent burning.
  • Allow the kale chips to cool completely before storing them in an airtight container.
  • Experiment with different seasonings and toppings to create a variety of flavored kale chips.
  • Enjoy kale chips as a healthy snack, salad topping, or appetizer.
