1 pound fresh green beans (ends trimmed)
2 cups Panko bread crumbs
1/3 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper

The juice from one small lemon (optional)

Steps:

  • Heat oven to 425 degrees Fahrenheit. Line a large baking sheet with parchment paper or a silicone mat.
  • In a small baking dish (room for the beans to roll around), stir together the Panko bread crumbs, parmesan cheese, garlic powder, salt, and pepper. Crack eggs into a shallow dish and whisk along with 2 tablespoons water.
  • Working with three or four beans at a time, dip the beans into the egg, then roll in the crumbs, turning and rolling to coat. Gently lay beans on the baking sheet in a single layer.
  • Evenly drizzle olive oil on top of fries.
  • Bake for 15-20 minutes, until tender and golden brown.
  • Squeeze a little lemon juice over the beans if you'd like and sprinkle with additional salt, if desired. Serve immediately.

Tips:

  • Choose fresh green beans: Look for green beans that are vibrant green in color and have no blemishes.
  • Trim the green beans: Trim the ends of the green beans before cooking.
  • Parboil the green beans: Parboiling the green beans helps to soften them and make them more pliable.
  • Use a good quality Parmesan cheese: The Parmesan cheese is what gives these fries their signature flavor, so use a good quality cheese that you enjoy the taste of.
  • Don't overcrowd the baking sheet: When baking the fries, don't overcrowd the baking sheet. This will prevent them from cooking evenly.
  • Serve the fries hot: Green bean fries are best served hot out of the oven. They can be served with a variety of dipping sauces, such as ranch dressing, blue cheese dressing, or marinara sauce.

Conclusion:

Baked Parmesan green bean fries are a delicious and healthy alternative to traditional French fries. They are easy to make and can be enjoyed by people of all ages. The Parmesan cheese and breadcrumbs give the fries a crispy, flavorful coating, while the green beans provide a healthy dose of vitamins and minerals. These fries are perfect for parties, potlucks, or as a snack.
