GERMAN SKILLET-BAKED PANCAKES

German Skillet-Baked Pancakes image

Provided by Ron Silver

Categories     Egg     Side     Bake

Number Of Ingredients 9

For the Pancakes
8 extra-large eggs
1 cup all-purpose flour
1 cup half-and-half
8 tablespoons (1 stick) unsalted butter, room temperature, plus 4 tablespoons, melted, for brushing on the pancakes
For the Topping
4 tablespoons unsalted butter, melted
Confectioners' sugar
2 lemons, cut into wedges

Steps:

  • Preheat the oven to 425°F.
  • In a large blender, combine the eggs, flour, and half-and-half. Blend on medium speed until the batter is fairly thick and smooth, scraping down the sides of the blender container several times.
  • Place 4 tablespoons of the softened butter in each of two 10-inch or 11-inch cast-iron skillets. Place each skillet over low heat and melt the butter.
  • Pour the batter over the melted butter in the skillets, making sure the batter is evenly distributed.
  • Carefully slide the skillets into the oven. Bake the pancakes for 25 minutes, or until puffed and golden.
  • Transfer the pancakes from the skillets to large plates or shallow bowls with a large spatula. Immediately pour 2 tablespoons of melted butter over each pancake. Sprinkle with confectioners' sugar and place wedges of lemon for squeezing on top of the sugared pancakes. Serve immediately.

Tips:

  • Preheat your oven: Make sure your oven is preheated to the correct temperature before baking your pancakes. This will help them rise evenly and cook through.
  • Use a good quality baking sheet: A heavy-duty baking sheet will help to prevent your pancakes from sticking and will also help them cook evenly.
  • Line your baking sheet with parchment paper: This will make it easy to remove your pancakes from the baking sheet and will also help to prevent them from sticking.
  • Use a large spoon or cookie scoop to drop the batter onto the baking sheet: This will help to ensure that your pancakes are all the same size and shape.
  • Don't overcrowd the baking sheet: Make sure to leave enough space between the pancakes so that they can cook evenly.
  • Bake the pancakes for the recommended amount of time: Overbaking will make your pancakes dry and tough.
  • Serve the pancakes immediately: Baked pancakes are best served immediately with your favorite toppings, such as butter, syrup, fruit, or whipped cream.

Conclusion:
