BAKED OYSTERS

Baked Oysters image

Ensure that you don'tlose a drop of juice by nestling your shellfish in salt. Fill a shallow ovenproof servingdish with coarse salt or sea salt, and place oysters in it as you shuck them. This willprevent them from tipping as you fill theirshells and while you move them in and out ofthe oven. The salt also provides an attractive crystalline backdrop that retains heat.

BAKED OYSTERS REMICK

Baked Oysters Remick image

This recipe is so good. We used to eat these all the time when we can purchase relatively inexpensive oysters nearby in the 1970's from the California coast but now I have to reserve this for special occasions. The recipe comes from the Plaza Hotel New York City. Life is sweet when I can have these while sipping great tasting white wine and seeing the bright reddish orange sun slowly going down the Pacific Ocean. Although these are great with oysters in half shelf, it also works fine with oysters already shucked and placed on gratin plate with the topping and baked. The presentation is better with half shelf, but gratin dish method works fine and maybe easier. If Using gratin dish method, discard the shells.

BAKED OYSTERS WITH SPINACH FENNEL PURéE AND CRISP-FRIED SHALLOTS

Baked Oysters with Spinach Fennel Purée and Crisp-Fried Shallots image

Categories     Bake     Cocktail Party     Oyster     Fennel     Spinach     Winter     Shallot     Gourmet

Yield Makes 12 baked oysters

Number Of Ingredients 8

3 tablespoons vegetable oil
1/2 cup thinly sliced shallots
1 pound fresh spinach, coarse stems discarded and the leaves washed well
1 teaspoon fennel seeds
3 tablespoons unsalted butter
1 cup finely chopped fennel bulb plus fennel sprigs for garnish
12 oysters, shucked (procedure follows) and the bottom shells reserved
coarse salt for filling the pan and platter

Steps:

  • In a small skillet heat the oil over moderately high heat until it is hot but not smoking and in it fry the shallots, stirring, until they are browned and crisp. Transfer the shallots with a slotted spoon to paper towels to drain, discarding the oil from the skillet, and sprinkle them with salt to taste. The fried shallots may be made 2 days in advance and kept wrapped in the paper towels at room temperature.
  • In a kettle cook the spinach in the water clinging to the leaves with the fennel seeds, covered, over moderate heat, stirring occasionally, for 3 minutes, or until it is wilted. In a colander drain the spinach mixture and press out the excess liquid. In a food processor purée the spinach mixture with 2 tablespoons of the butter and salt and pepper to taste and transfer the purée to a small bowl. In the small skillet cook the fennel bulb in the remaining 1 tablespoon butter over moderately low heat, stirring, until it is just tender and stir it into the spinach purée. The spinach fennel purée may be made 1 day in advance and kept, its surface covered with plastic wrap, chilled.
  • Arrange the oysters in the reserved shells in a jelly-roll pan filled with some of the coarse salt (to balance the shells), divide the spinach fennel purée among them, and bake the oysters in a preheated 400°F. oven for 12 to 15 minutes, or until they are just cooked through. Top the oysters with the fried shallots, garnish them with the fennel sprigs, and arrange them on a platter filled with more of the coarse salt.
  • To shuck oysters:
  • Scrub the oysters thoroughly with a stiff brush under running cold water. Hold each oyster flat side up on a work surface with the hinged end away from you, insert an oyster knife between the shells at the hinged end, twisting the knife to pop open the shell, and slide the blade against the flat upper shell to cut the large muscle and free upper shell. If the shell crumbles and cannot be opened at the hinge, insert the knife between the shells at the curved end of the oyster, pry the shells open, and sever the large muscle. Break off and discard the upper shell and slide the knife under the oyster to release it from the bottom shell.

Yield Makes 10 servings

Number Of Ingredients 12

1 tablespoon butter
1 tablespoon all purpose flour
1 cup whipping cream
8 ounces bacon (preferably applewood-smoked), chopped
4 cups thinly sliced leeks (white and pale green parts only; from 4 large)
1 cup finely chopped celery
1 bay leaf
1/8 teaspoon cayenne pepper
2 tablespoons dry white wine
2 tablespoons grated Pecorino Romano cheese
20 medium oysters, shucked, or four 8-ounce jars shucked oysters
1 cup fresh breadcrumbs made from crustless French bread

Steps:

  • Melt butter in small skillet over medium heat. Add flour; whisk 2 minutes. Add cream slowly and whisk until mixture thickens slightly. Remove from heat.
  • Sauté bacon in heavy large skillet over medium heat until crisp, about 6 minutes. Transfer bacon to paper towels to drain. Discard all but 2 tablespoons drippings from skillet. Add leeks, celery, bay leaf, and cayenne to skillet and sauté over medium heat until vegetables are soft, about 12 minutes. Add wine and cook until absorbed, about 15 seconds. Add cream mixture and bring to simmer. Stir until leek mixture thickens slightly, about 3 minutes. Stir in bacon and cheese. Season generously with salt and pepper. (Can be made 1 day ahead. Cool slightly. Cover and refrigerate.)
  • Place 1 oyster on each of 20 oyster shells or place 2 oysters in each of 10 small ramekins. Top oyster in each shell with 2 tablespoons leek mixture, or top oysters in ramekins with 1/4 cup leek mixture. Place on rimmed baking sheet. (Can be made 4 hours ahead. Cover and chill.)
  • Preheat oven to 500°F. Divide breadcrumbs among shells or ramekins. Bake until leek mixture bubbles and crumbs are golden, about 8 minutes.

Tips:

  • Select the Right Oysters: Choose plump, medium-sized oysters with tightly closed shells. Avoid oysters with cracked or broken shells.
  • Properly Clean the Oysters: Scrub the oyster shells thoroughly with a stiff brush to remove any dirt or debris. Use a knife to carefully remove the top shell of each oyster, being mindful not to spill the oyster liquor.
  • Prepare the Baking Dish: Line a baking dish with parchment paper to prevent the oysters from sticking. Arrange the oysters in the prepared dish, ensuring they are evenly spaced.
  • Use Fresh Ingredients: Opt for fresh herbs, such as parsley, chives, or thyme, to enhance the flavor of the oysters. Use high-quality butter and grated Parmesan cheese to create a rich and savory topping.
  • Baking Time and Temperature: Bake the oysters at a high temperature, typically between 400°F and 450°F, for a short duration, usually around 10-15 minutes. This ensures that the oysters are cooked through while maintaining their plumpness and delicate texture.

Conclusion:
