- Preheat oven to 400 degrees.
- Tear off 4 sheets of aluminum foil that are large enough to fold over an orange roughy filet and have a few inches to spare on each side to seal the packet. On each sheet, place a filet slightly off center and add 1 large oven-dried tomato slice and 2 lemon slice halves on top. Top each fillet with a quarter of the fresh thyme, and then top with 1 tablespoon butter. Sprinkle salt and pepper on top to taste.
- Seal the packet by folding the aluminum foil in half over the ingredients. Fold the three open sides one at a time and over several times to seal the foil packet completely. The packets should be tight enough to hold in steam, but still loose enough to allow room for the air to expand.
- Into the preheated oven, place the packets and cook for 15 minutes. (If using filets that are still frozen, add a couple minutes to your cooking time.)
- After cooking, open the foil packets carefully to avoid the hot steam. Discard lemon slices. You can either transfer the filets to plates or leave them inside of the foil packets. Serve with Mediterranean pasta salad, steamed vegetables, or another side dish with complementary flavors.

- Preheat your oven to 400 degrees F.
- Heat the EVOO in a nonstick skillet and sautee the garlic for a min or so.
- Add the onions, cook about halfway to done. Turn off the stove.
- Add the roasted red peppers last, they're already cooked so only need to be heated through for a min or so.
- Place each raw fillet in their own aluminum foil pack or 2 fillets per 1 pack if you want to save foil (i find 4 in one pack is too difficult to work with).
- Spoon the onion/pepper/garlic mixture made above over the fillets and then the olives too.
- Close the foil around the fish, leaving a teeny hole for steam escape.
- Bake for about 15-20 minutes, fish should flake easily w/ a fork.

ORANGE ROUGHY WITH BOK CHOY AND CHERRY TOMATOES

- In a large skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the onion for about 3 minutes, or until soft, stirring occasionally.
- Add the fish, broth, wine, and pepper to the skillet. Bring to a simmer, still over medium-high heat. Reduce the heat and simmer, covered, for 8 to 10 minutes, or until the fish flakes easily when tested with a fork.
- Meanwhile, trim and discard the ends of the bok choy stalks. Slice the stalks crosswise into 1/4-inch pieces. Transfer to a small bowl. Cut the bok choy leaves crosswise into thin strips. Transfer to a separate small bowl. Halve the tomatoes. Add to the bok choy leaves. Set aside.
- Put the flour in a small bowl. Add the water, whisking to dissolve. Set aside.
- When the fish is done, use a slotted spatula or slotted spoon to transfer to a platter. Cover with aluminum foil to keep warm. (The fish will continue to cook slightly as it stands.)
- Add the bok choy stalks to the skillet. Increase the heat to medium high and bring to a simmer. Simmer for 1 to 2 minutes, or until tender-crisp, stirring occasionally.
- Stir in the flour mixture. Cook for 1 to 2 minutes, or until thick and bubbly, stirring occasionally. Reduce the heat to low.
- Add the bok choy leaves and tomatoes. Cook for 1 to 2 minutes, or until the leaves are tender and the mixture cools slightly, stirring occasionally. Remove from the heat (leave the stove on).
- Stir in the sour cream. Return to the heat and cook for 1 to 2 minutes, or until warmed through, stirring occasionally. Spoon over the fish.
