2 tablespoons butter
1/2 cup heavy whipping cream
1/4 cup dry white wine
1/8 teaspoon black pepper

4 russet potatoes, sliced into 1/4 inch slices
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
½ teaspoon salt

  • Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
  • In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. 6 large yellow onions (about 4 pounds)
4 slices bacon (about 3 ounces), diced
1 sprig fresh thyme
1 sprig fresh rosemary
1 sprig fresh sage
1/8 teaspoon kosher salt, plus to taste
Pinch sugar
Freshly ground black pepper, to taste
1/4 cup white wine
1/4 cup heavy cream
3/4 cup grated Gruyere cheese (about 3 ounces)
2 teaspoons Dijon mustard
1 tablespoon unsalted butter, plus for buttering the dish
1/3 cup fresh breadcrumbs

Steps:

  • Peel the onions, but leave the root end intact. Pour about 2 inches of water into a large saucepan and set up a collapsible steamer inside. Steam the onions until easily pieced by a knife, about 30 minutes. (For more tender onions you may steam them a little longer; however, they might be somewhat harder to hollow out. Either way they're delicious!) Set aside to cool.
  • Slice off about a third of the top portion of each onion. Using a paring knife, cut out the insides of each onion, leaving about 4 outside layers intact, to make a container for stuffing. Chop the onion insides and tops.
  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium-high heat. Add the bacon and cook, stirring, until crispy and the fat has rendered, about 3 minutes. Add the chopped onion, herb sprigs, 1/8 teaspoon salt, and sugar. Season with pepper and cook, stirring occasionally, until lightly browned, about 12 minutes. Add the wine and cook until dry, scrapping the bottom of the skillet with a wooden spoon to get up any browned bits, about 2 minutes. Stir in the cream and remove from the heat. Remove and discard the herb sprigs. Stir in the cheese and mustard.
  • Lightly butter a baking dish. Season the inside of the onions with salt and pepper, and spoon the stuffing into each onion cavity, mounding it slightly on top. Set the onions in the dish.
  • Heat the butter in the skillet. Add the breadcrumbs and stir until they absorb the butter. Spoon the buttered breadcrumbs on top of each onion.
  • Roast the onions until well browned and heated through, about 40 minutes. Serve warm or at room temperature.

6 leeks (white and pale green parts only), sliced
2 large onions, cut into eighths
8 shallots, halved
2 garlic cloves, minced
1 1/2 10-ounce bags frozen baby onions, thawed, drained
2 cups whipping cream
2 tablespoons dry breadcrumbs
2 tablespoons chopped fresh parsley

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks, large onions, shallots and garlic and sauté until all are tender, about 20 minutes. Add baby onions and cook 10 minutes longer, stirring occasionally. Mix in 2 cups whipping cream. Boil until cream is thickened to sauce consistency, about 10 minutes. 1.2kg mixed tomato , from really big to cherry

50-85g fresh white breadcrumbs - if you've got a crust, use this so the crumbs are nice and golden

8 medium yellow onions, peeled and sliced
2 tablespoons butter
1/4 cup dry sherry
1/8 teaspoon nutmeg
salt and pepper
1/4 cup heavy cream
1/2 cup grated swiss cheese
1/4 cup grated parmesan cheese or 1/4 cup romano cheese, for topping

Steps:

  • In two batches, sauté the onion in the butter in a large frying pan. Cook only until limp. Do not brown or discolor.
  • Deglaze the pan, or remove the onion from the pan and pour sherry, scrapping the pan with a wooden spoon to dissolve the brown, toasted onions.
  • Mix the onions, the sherry, nutmeg, salt, pepper and heavy cream together and place in a baking dish. Top with the Swiss and then Parmesan or Romano.

These aren't my mama's greens. That's no disrespect to mama since I absolutely love a pot of greens just like she makes, but this year, with all of the rain we had in Texas, greens were about all of the vegetables that made in my garden, so I was growing weary of the same old pot of greens. Therefore, I came up with this recipe after I had baked some spaghetti squash au gratin, and I thought, "why not?" Make this with whatever greens you have, but I had Swiss chard and beet greens in my garden. These are so cheesy and good that green naysayers just might be tempted by them.

- olive oil cooking spray
3 cup(s) very packed when measuring, greens with tough stems removed (swiss chard, kale, mustard, beet greens, or any kind of greens)
1 cup(s) fresh onion, sliced and then separated into individual rings
1 clove(s) garlic, minced
1/2 cup(s) scant measurement, cream
1 1/3 cup(s) grated parmesan cheese (separate 1 cup from the 1/3 cup)
- salt and pepper to taste
OPTIONAL ADDITIONS
- spaghetti squash, yellow or zucchini squash, potatoes, or other vegetables can be added; spaghetti squash adds nice texture; if adding spaghetti squash, bake the squash first; if adding potatoes, adjust the baking time.

Steps:

  • Be sure greens are washed well and remove tough stems. This can be done ahead of time.
  • Begin with a shallow dish sprayed with olive oil spray, (mine was 8X6 inch but 8X8 would work too). Layer 2 cups (tightly packed cups) of greens in the bottom of the dish. Lightly sprinkle with salt and pepper. Sprinkle 1/3 cup of parmesan over this and then pour on 1/2 cup of cream. The cream will sink to the bottom.
  • On top of this, layer most of the cup of fresh onion cut into ringlets. Also, add all of the minced garlic. Then repeat with the last cup of packed greens, the rest of the onions and a bit more salt and pepper. You can always salt more later if needed, but if you oversalt, you can't undo it. Carefully, top with the cup of grated parmesan cheese, and bake 20-25 minutes in a preheated 350 degree oven. (It will be very full if using an 8X6 inch pan, but it cooks down.)
  • Note: Prep time will be reduced greatly if you don't have to wash freshly picked greens like I had to do.

Steps:

  • THAW 1 (14 ounce) bag Bird's Eye Frozen petite Whole Onions; LET drain; MINCE 1/4 teaspoon fresh thyme leaves; GRATE 1/2 cup Sharp Cheddar Cheese; SET aside.
  • MELT 2 tablespoons butter in a 1-2 quart saucepan over medium heat; ADD drained onions; RAISE heat to medium-high; STIR onions constantly as they cook, until they begin to caramelize.
