1 teaspoon kosher salt
1 teaspoon garlic powder
½ teaspoon ground black pepper, plus more for serving
8 ounces shredded Cheddar-Jack cheese (about 2 cups), divided
½ cup coarsely chopped soft fresh herbs (such as parsley, chives, dill, tarragon, or cilantro)

Steps:

  • Preheat oven to 400°F. Grease a 13- x 9-inch baking dish with cooking spray. Whisk together eggs, heavy cream, scallions, salt, garlic powder, black pepper, and 1 cup of the cheese in a large bowl. Pour egg mixture into prepared baking dish; top with remaining 1 cup cheese.

We like this best with a combination of lean beef and lamb. Syrian pepper is a common spice blend used in Syrian and Armenian cooking; I've posted a recipe for it under my profile. If you don't have an oven-safe skillet, combine the ingredients and bake in a buttered baking pan.

1 lb ground lamb or 1 lb beef
10 large eggs, beaten
1 large onion, chopped fine
1 tablespoon cornstarch
1 cup parsley, chopped
1 teaspoon salt

  • Preheat oven to 375º F.
  • In an oven-safe skillet, brown the meat and onion over medium-high heat.

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly grease a well seasoned iron skillet, and place it in the oven while the oven is preheating, and you are preparing the omelet.
