BAKED OMELET WITH MEAT (IRGEE)
This recipe comes from the cookbook published by my grandmother-in-law's Armenian Orthodox church. I have to give it back to my mother-in-law, so I'm transcribing the good recipes here. We like this best with a combination of lean beef and lamb. Syrian pepper is a common spice blend used in Syrian and Armenian cooking; I've posted a recipe for it under my profile. If you don't have an oven-safe skillet, combine the ingredients and bake in a buttered baking pan.

Tips:
- For a fluffy omelet, separate the egg whites and yolks. Beat the egg whites until stiff peaks form, then fold them into the yolks.
- To prevent the omelet from sticking to the pan, use a non-stick skillet or grease the pan with butter or cooking spray.
- Cook the omelet over medium heat. If the heat is too high, the outside of the omelet will cook too quickly and the inside will be undercooked.
- Don't overcook the omelet. It should be cooked through, but still slightly moist in the center.
- To make a Denver omelet, add diced ham, green bell pepper, and onion to the beaten eggs before cooking.
- To make a Western omelet, add diced ham, green bell pepper, onion, and cheddar cheese to the beaten eggs before cooking.
- To make a Greek omelet, add diced feta cheese, spinach, and olives to the beaten eggs before cooking.
- To make a vegetarian omelet, add diced vegetables, such as bell peppers, mushrooms, and zucchini, to the beaten eggs before cooking.
