1/2 teaspoon Ground Ginger
1/2 teaspoon Fine Grain Sea Salt
1/4 teaspoon Ground Nutmeg
2 cups Unsweetened ALmond Milk

2 teaspoons Vanilla Extract

1 Ripe Pear, Peeled & Diced
1/2 cup Chopped Walnuts

  • Bake, uncovered, for 35-45 minutes until the oatmeal is bubbly and the apples are fork tender.
  • Cool the oatmeal for 5-10 minutes before serving. Enjoy with a splash of almond milk and drizzle of maple syrup if desired.
  • Cool the oatmeal completely before wrapping it up and placing it in an airtight container. It will keep in the fridge for 5 to 6 days or in the freezer for 2 to 3 weeks.

Time 50m

Yield 6 serving(s)

Number Of Ingredients 13

2 cups rolled oats
1/2 cup brown sugar
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup walnuts or 1 cup pecan pieces
1 cup mixed berry (frozen)
1/2 cup milk chocolate chips
2 cups milk
1 large egg
3 tablespoons butter, melted
1 tablespoon vanilla extract
1 banana, peeled cut into 1/2-inch slices

Steps:

  • Preheat oven to 375.
  • Spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
  • In a large bowl, mix together the oats, sugar, baking powder, cinnamon, salt, half the walnuts/pecans, half the berries and half the chocolate chips. (Save the other half of berries, walnuts/pecans and chocolate chips for the top of the oatmeal).
  • In another bowl, whisk together the milk, egg, butter and vanilla extract. Add the oat mixture to prepared baking dish.
  • Arrange the remaining berries, walnuts/pecans and chocolate on top.
  • Add the banana slices to the top then pour the milk mixture over everything.
  • Gently shake the baking dish to help the milk mixture go throughout the oats.
  • Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set.

Tips:

  • Use ripe bananas: Overripe bananas add sweetness and moisture to the casserole. If you don't have ripe bananas, you can ripen them quickly by placing them in a paper bag with an apple at room temperature for a few days.
  • Don't overmix the batter: Overmixing the batter will make the casserole tough. Mix just until the ingredients are combined.
  • Bake the casserole until a toothpick inserted into the center comes out clean: This usually takes about 45 minutes. If the toothpick comes out with wet batter, bake for a few more minutes.
  • Let the casserole cool for a few minutes before serving: This will help it to set and make it easier to slice.
  • Serve the casserole with your favorite toppings: Some popular toppings include maple syrup, brown sugar, butter, and fruit.

Conclusion:

Baked oatmeal casserole is a delicious and easy-to-make breakfast or brunch dish. It's perfect for a crowd, and it can be made ahead of time. With its simple ingredients and endless topping possibilities, baked oatmeal casserole is a versatile dish that can be enjoyed by people of all ages.
