Mahi-Mahi with Pineapple Glaze, Peppers and Coconut Rice image

Vegetable oil, for the pan
1 shallot, finely diced
1 teaspoon kosher salt
2 cups coconut milk
1 cup short-grain rice
Neutral oil, for the pan
3 cloves garlic, minced
1-inch piece ginger, grated
1 teaspoon sambal
Kosher salt
3 scallion ends, finely chopped
1 cup pineapple juice
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons Dijon mustard
1 lime, zest and juice
Olive oil, for the pan
1/2 red bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1/2 red onion, thinly sliced
1 teaspoon kosher salt
2 fillets mahi-mahi

Steps:

  • For the coconut rice: Heat the oil in a medium saucepot over medium heat. Add the shallots and salt and cook until translucent, about 2 minutes. Add the coconut milk and rice and bring to a boil. Reduce the heat to medium low and cover with a lid. Cook for about 15 minutes. Remove lid and fluff the rice.
  • For the pineapple glaze: Heat a medium saucepan over medium heat and add oil to coat. Add the garlic and ginger and cook until soft and fragrant, about 2 minutes. Be sure to stir often because the sugars will burn quickly! Then add the sambal and salt. Add the scallions and cook until soft, about 2 more minutes. Then, add the pineapple juice, soy sauce, brown sugar, Dijon mustard and lime juice and zest. Bring to a boil then reduce to a simmer. Cook until reduced by one-quarter and thick and glossy, about 10 minutes.
  • For the mahi-mahi and peppers: Heat a grill pan to medium high. Coat the grill pan in olive oil. Add the peppers and onions and cook until browned, slightly charred and beginning to soften. Move the peppers to the side of the grill pan. Add a bit more olive oil. Salt the mahi-mahi on both sides. Sear the fish on each side until golden brown, about 3 minutes per side.
  • Coat the mahi-mahi with the pineapple glaze using a pastry brush. Flip the fish and coat generously on the reverse side. Cook for an additional 2 minutes. Remove from the pan and serve with the coconut rice and grilled peppers. Aloha!

1 1/2 lb mahi mahi filets
1 each of red,yellow, green peppers, sliced
2 shallots, sliced
2 lemons
1/4 c butter, melted
salt/pepper to taste
1/4 c parsley , chopped
1/4 c cilantro,chopped

Steps:

  • 1. cut mahi-mahi into about 6 pieces, salt and pepper each side.
  • 2. slice the peppers and shallots,place on the bottom of a oil sprayed baking dish.
  • 3. place the mahi-mahi pieces on top and squeeze the juice of 1 lemon and drizzle with butter, top with sliced lemon and sprinkle with the parsley and cilantro, cover and bake at 350 about 30 mins or slightly firm to touch.

3 tablespoons butter
2 large eggs
1 cup shredded Parmesan cheese
3 tablespoons all-purpose flour
4 (6 ounce) mahi mahi fillets
salt and ground black pepper to taste
½ cup finely chopped toasted macadamia nuts
1 cup mango salsa

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat olive oil and butter in an oven-proof pan over low heat until butter is melted. Remove from the heat.
  • Beat eggs in a small, shallow dish. Mix Parmesan and flour in a second shallow dish.
  • Season mahi mahi fillets with salt and pepper. Dip into beaten egg. Lift up so excess egg drips back in the bowl. Press into Parmesan mixture to coat both sides. Lay each fillet into the melted butter mixture, then turn each piece over to coat. Sprinkle macadamia nuts evenly over each fillet.

1 pound mahi mahi filets
2 Tablespoons butter
2 cups cherry tomatoes (assorted colors)
1/4 cup fresh cilantro (chopped)
1 tsp salt (or to taste)

1 tsp garlic powder
1/2 tsp cumin

Steps:

  • Preheat the oven to 375°F.
  • Pat dry fish filets and set aside.

¼ cup raw honey
1 clove garlic, grated
¼ teaspoon coriander
¼ teaspoon white pepper

1 teaspoon of salt, divided
1 orange, divided
2 mangoes, diced
1 yellow bell pepper, finely diced
1 red bell pepper, finely diced
¼ cup finely chopped cilantro
2 tablespoons olive oil
1 lime, juiced

Steps:

  • Preheat the oven to 425 F.
  • Prepare the glaze: In a bowl, combine the honey, garlic, coriander, white pepper, chili powder, ¼ teaspoon salt, and juice from half the orange. Whisk well until completely combined.
  • Place the mahi mahi fillets on a foil-lined baking sheet. Brush each fillet with a generous amount of glaze, reserving any remaining glaze. Slice the remaining half of the orange, and slide the slices under the fillets for baking. You can also put the slices on top of the fillets.

4 tablespoons extra-virgin olive oil
2 teaspoons freshly squeezed lemon juice
12 cherry or pear red and yellow tomatoes, for garnish

  • Preheat oven to 450 degrees F.
  • Make a bed of herbs in a medium gratin dish or baking dish with the thyme, 4 of the parsley sprigs, and the bay leaves. Scatter the garlic on top.
