1 pound ziti pasta
1 tablespoon extra-virgin olive oil
12 ounces pancetta, sliced into 1/4-inch thick slices, chopped
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup all-purpose flour
3 1/2 cups whole milk, at room temperature
Zest of 2 large lemons
3/4 cup grated Parmesan
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup chopped fresh basil
2 tablespoons chopped fresh thyme
1/4 cup fresh lemon juice (from 1 large lemon)
2 cups shredded mozzarella
2/3 cup plain breadcrumbs
1/3 cup grated Parmesan
Extra-virgin olive oil, for drizzling

Steps:

  • For the pasta: Place an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter a 13- by 9- by 2-inch glass or ceramic baking dish.

4 tbsp. Salted Butter
2 tbsp. Olive Oil
2 cloves Garlic, Minced
1 whole Lemon, Juiced And Zested
2 c. Sour Cream
1/2 tsp. Kosher Salt, Or More To Taste
Plenty Of Grated Parmesan Cheese
Flat-leaf Parsley, Chopped
Extra Lemon Juice

Steps:

  • Preheat oven to 375 degrees. Cook spaghetti until al dente.In a skillet, melt butter with olive oil over LOW HEAT. When butter is melted, add minced garlic. Squeeze lemon juice into the pan. Turn off heat.Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary. Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish.Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes.
