Steps:
- Preheat oven to 400 degrees. Spray a non-stick baking sheet with cooking spray.
- In a bowl, combine cream cheese, shredded cheese, diced jalapenos, sliced green onions, crumbled bacon, and spices. Stir well to combine.
- Beat an egg with 1 T water to make an egg wash. Take an egg roll wrapper and place it on a work surface on the diagonal. Brush all 4 edges with egg wash. Use about 1-2 Tablespoons (depending on how big you want to make them) of jalapeno cheese mixture and place it in the center of egg roll wrapper. Roll up the lower corner around the mixture, fold in the left side, fold in the right side, and roll it over to the top corner. Lay them seam side down on prepared baking sheet. Brush the tops with egg wash and sprinkle with garlic powder and finely shredded cheese.
- Bake 12-14 minutes.

Steps:
- Preheat the oven to 275 degrees F. Set a wire rack over a baking sheet.
- If you have them, slip on some latex gloves for the pepper prep. Cut the jalapenos in half lengthwise. With a spoon, remove the seeds and white membranes (the source of the heat; leave a little if you like things HOT). Smear cream cheese into each jalapeno half and then wrap with a bacon piece (1/2 slice). Secure by sticking a toothpick through the middle. Place on the rack in the baking sheet.
- Bake for 40 to 45 minutes. (You don't want the bacon pieces to shrink so much they start to squeeze the jalapenos.) If after 45 minutes the bacon doesn't look brown enough, just keep cooking until the bacon is sizzling.
- Serve immediately, or they're also great at room temperature.

Tips:
- For a crispier egg roll, use wonton wrappers instead of egg roll wrappers.
- To make the egg rolls easier to roll, wet the edges of the wrappers with water.
- Be careful not to overfill the egg rolls, or they will be difficult to seal.
- If you don't have time to make the filling ahead of time, you can use store-bought cream cheese spread.
- Serve the egg rolls with your favorite dipping sauce, such as sweet and sour sauce, ranch dressing, or honey mustard.
Conclusion:
These Baked Jalapeno Popper Egg Rolls are a delicious and easy appetizer that is perfect for any party or gathering. They are crispy, cheesy, and packed with flavor.
