One dish, kid lovin' ground beef, pasta, tomato casserole. This dish is tasty, easy to prepare with a minimum of effort, inexpensive and my 39 year son still requests it for dinner. He's getting married and I'm giving his fiance' a copy of the recipe. Maybe 25 years ago I was home from surgery and my bible study group brought dinners and this was one of them. It was #1 and I got the recipe. It's been a family favorite since.

1 lb lean ground beef
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup (do not dilute)
1 (15 ounce) can corn, drained
1 (15 ounce) can diced tomatoes, drained, save juice to add later to casserole as it simmers
8 ounces pasta, such as macaroni, flat noodles, tube, sea shell, etc
3 tablespoons dried onion
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon cracked black pepper
1/4 teaspoon oregano
1/8 teaspoon chili powder
1/2 teaspoon cumin

Steps:

  • Brown ground beef in a large frying pan and drain well. Place back in pan, then all the ingredients, except the noodles. Mix well, cover and simmer.
  • While preparing the above, cook the noodles al dente, drain well and add to the meat mixture. Save the noodle water as you will need to add liquid to the casserole as it cooks down, but use the saved diced tomato juice first. I add garlic powder to the noodle water, while cooking, to flavor the water.
  • Add noodles.
  • Cook on low-to-simmer for about 15-20 minutes. Check often and stir. Add tomato juice/noodle liquid, as needed. It can get too thick.

1 cup chopped mushrooms
½ onion, chopped
1 (8 ounce) can tomato sauce
½ teaspoon salt
½ teaspoon ground black pepper
1 cup shredded Cheddar cheese
1 (8 ounce) package refrigerated crescent rolls
¼ teaspoon chopped fresh basil
¼ teaspoon chopped fresh oregano
½ cup sour cream

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef, mushrooms, and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Mix in tomato sauce, salt, and pepper. Spread into an ungreased 8x12-inch baking dish and sprinkle with Cheddar cheese.
  • Separate crescent dough into 8 triangles. Mix basil and oregano into sour cream. Spread 1 teaspoon of the sour cream mixture onto each triangle. Roll up into a crescent roll, starting at the wide end. Arrange rolls on top of meat mixture in the dish.

1 (26 ounce) jar chunky spaghetti sauce
1 cup cottage cheese
1/4 cup grated parmesan cheese
1 egg, slightly beaten
2 tubes crescent rolls
1 cup grated mozzarella cheese

Steps:

  • Preheat oven 375 degrees.
  • In a large frying pan, brown beef.
  • Drain.
  • Stir spaghetti sauce into beef.
  • Simmer 5 min over low heat.
  • In a bowl, combine cottage cheese, parmasean cheese, and egg.
  • Lay on tube dough along bottom of 9x13 in pan.
  • Press to form a crust sealing cracks.
  • Layer half meat mixture, cheese mix, then remaining meat mix.
  • Sprinkle mozzerella cheese over top.

1 lb spaghetti, broken up and cooked until almost tender

1 package (16 oz) uncooked pasta (such as penne, ziti, rotini or rigatoni)
4 cups marinara sauce (homemade or purchased)
1/2 cup grated Parmesan or Romano cheese
1 container (15 oz) ricotta cheese
2 cups shredded mozzarella cheese (8 oz)

Steps:

  • Cook pasta in generously salted water 3 minutes less than recommended on package. Drain.
  • Meanwhile, heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Pour 2 cups of the marinara sauce into dish. Add half of cooked pasta; toss well. Sprinkle with 1/4 cup Parmesan cheese. Spoon half of the ricotta cheese in dollops over top. Sprinkle with 1 cup of the mozzarella cheese. Repeat layers ending with mozzarella cheese. Cover lightly with foil, making sure foil is not resting on cheese.

3 cups uncooked medium pasta shells
3 plum tomatoes, sliced

1/2 lb bulk sausage
1 large onion, chopped
1 pinch garlic powder
1/2 tsp salt
1/8 tsp pepper
4 oz canned mushrooms with juice
8 oz egg noodles
10 3/4 oz tomato soup
6 oz tomato paste, italian
17 oz tomatoes, canned italian style with juice
1 c cheddar cheese, shredded

Steps:

  • 1. Combine beef, sausage, onion, garlic powder, salt, and pepper. Steam 3-5 minutes in covered heavy skillet, until redness disappears from beef. Do not brown. Add mushrooms with juice. Transfer to greased 2 quart baking dish. Cook noodles and drain. Add soup, tomato paste, and tomatoes with juice to noodles. Stir well. Add noodles and half the cheese to meat, mixing well. Sprinkle remainder of cheese over top. Bake at 350 degrees for 30 minutes, or until casserole bubbles and cheese is melted.

16 ounces rigatoni pasta or 16 ounces pasta shells

1 (28 ounce) jar favorite pasta sauce

Steps:

  • Preheat oven to 400*.
  • Pan brown sausage until tender, drain and cool, then crumble coarsely.

  • Bake in a preheated oven for about 25-30 minutes until cheese on top is light brown and bubbling.
