2 lbs chicken drummettes
1/4 cup butter, melted
6 ounces franks buffalo wing sauce
1/2 teaspoon fresh cracked pepper
1/2 teaspoon granulated garlic
1/8 teaspoon cayenne, ground
1/8 teaspoon cumin
1 teaspoon cider vinegar
1/2 teaspoon kosher salt

Steps:

  • Preheat oven to 350 degrees.
  • Spray a disposable aluminum cookie sheet that has 1/2 - 1 inch sides with non-stick spray; set aside.
  • Combine all above ingredients except chicken to make hot sauce marinade and blend well.
  • Dip chicken pieces in hot wing sauce and coat evenly. Place chicken pieces in an even layer on disposable cookie sheet. Pour remaining hot sauce evenly over chicken pieces.
  • Bake at 350 degrees for 1 hour until chicken is cooked through and chicken skin is crispy.
  • Serve with ranch or blue cheese dressing for dipping. Enjoy.

6 lb chicken wings, disjointed & tip discarded if desired
2 Tbsp steak seasoning
2 Tbsp granulated garlic
1 Tbsp black pepper
1 1/2 Tbsp granulated onion powder
2 Tbsp paprika
1 tsp cayenne pepper or ground red pepper
4 c panko bread crumbs
WING SAUCE
1 stick butter
1/2 c hot sauce ( your favorite brand)

Steps:

  • 1. Spray a large shallow baking pan & rack with non stick cooking spray & set aside till needed. Preheat oven to 400 degrees F.
  • 2. Disjoint chicken wings by cutting between the joints with a sharp knife. There should be 3 pieces, discard the boney tip portion if desired. Repeat this step until all the wings are disjointed.
  • 3. Place the wings in a large bowl.
  • 4. These are some of the spices used for the seasoning.
  • 5. This is the remaining spices. Combine them all together and pour into a large gallon zip lock bag.
  • 6. Add the panko bread crumbs to the bag.
  • 7. Then shake to mix the spices with the bread crumbs.
  • 8. Place some of the seasoned bread crumb mixture in a shallow platter, then add a few of the wings at a time and coat on all sides. THE PURPOSE OF POURING THE MIXTURE FROM THE BAG, INSTEAD OF DIPPING INTO THE BAG, IS TO PREVENT CONTAMINATING THE ENTIRE BAG WITH RAW MEAT. THAT WAY IF THERE IS SOME LEFT YOU CAN STORE IN THE FREEZER FOR NEXT TIME YOU NEED SOME & IT IS ALREADY MADE UP.
  • 9. Place on prepared baking rack. Repeat until all are done. Then spray wings lightly with cooking spray. I used butter flavored cooking spray. Place in preheated 400 degrees F. oven and bake for one hour or until juices run clear.
  • 10. REMOVE FROM OVEN.
  • 11. Prepare sauce by combining equal parts of butter and hot sauce in a small sauce pan, and heating over medium high heat. Heat until butter melts, then stir to blend together. Remove from heat.
  • 12. Add 3 to 4 Pieces of chicken to the sauce pan and coat on all sides, then place chicken on a platter, and repeat till all of the chicken has been coated in the sauce. If additional sauce is needed heat equal parts of butter with the hot sauce.
  • 13. Serve as is or with a dipping sauce. I made a Blue Cheese Dipping Sauce and will post the recipe for it soon as well as the link once it has been posted. This is a great Buffalo Hot Wings recipe whether you are paleo or not. If you are really strict paleo, start with a paleo compliant hot sauce (I have two paleo compliant hot sauces to chose from on this site). If you aren't that picky, use Franks Red Hot Buffalo Sauce.

50 chicken, drumetts (organic) or 25 whole chickens, wings cut into two pieces (discard tips)
2 cups hot sauce (commercial or homemade)
1 cup butter (organic)
2 teaspoons cayenne pepper
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1/2 cup baking powder
olive oil flavored cooking spray (Pam)

Steps:

  • Preheat oven 250°F Line baking sheet with foil. Spray baking rack with Olive oil Pam and place in pan.
  • Spray the chicken pieces with Olive oil Pam, then salt and pepper to taste. Season with garlic powder.
  • In a large zip lock bag, place 1/4 cup of the baking powder and 1 tsp of cayenne pepper. Add half the chicken and toss until coated. Place on the cooking rack. Repeat with other half of chicken and remaining powder and cayenne.
  • Bake coated chicken wings for 20 min at 250 F, then increase heat to 425 F and bake for 20 more minutes. Turn pieces over and bake for another 20 min or until golden brown and chicken is thoroughly cooked.
  • If making your own buffalo sauce, heat prepared hot sauce (commercial or homemade) and butter in a sauce pan until well blended. Pour sauce in a large bowl. If using a commercially prepared buffalo sauce just pour it in a large bowl. I highly recommend my habanero mango sauce (also paleo compliant), but Franks Red Hot Buffalo Sauce is quite good and not terrible from a paleo point of view.
  • Toss all the cooked chicken until evenly coated. Transfer to a platter and serve with your favorite sides.

½ cup butter
2 tablespoons distilled white vinegar
1 tablespoon all-purpose flour

  • Preheat oven to 400 degrees F (200 degrees C). Arrange frozen chicken wings in a single layer in a shallow baking dish.

  • 1. Preheat oven to 400 degrees F (200 degrees C). 2. Place frozen wings in a single layer in a shallow pan. 3. Bake for 25 minutes then turn the wings onto the other side. 4. While wings finish cooking, place butter, hot sauce, vinegar into a sauce pan. Heat slowly, stirring with wire whisk until butter has melted. Add the flour slowly until combined, then keep stirring until desired thickness. 5. Drain wings when finished, let stand for 5 minutes. Pour sauce over drained wings and toss.

Steps:

2 1/2 lbs chicken wings
1/3 cup hot sauce (Frank's Red Hot)
1/2 tablespoon honey
1 tablespoon white wine
1/2 teaspoon black pepper
