Zest of 2 limes, removed with a vegetable peeler
1/3 cup freshly squeezed lime juice, about 3 limes
1/4 cup honey
4 cloves of garlic, smashed, skins removed
2 tablespoons soy sauce
1/4 teaspoon Tabasco sauce
4 pounds (about 24) chicken wings, washed and patted dry
Coarse salt

Steps:

  • Combine lime zest, lime juice, honey, garlic, soy sauce, and Tabasco sauce in a large bowl. Add chicken wings and toss to combine. Cover with plastic wrap and refrigerate, stirring occasionally, for at least 3 and up to 8 hours.

¼ cup honey
2 tablespoons fresh lime juice
1 tablespoon grated lime zest
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup all-purpose flour
2 quarts vegetable oil for frying

1/4 cup honey
3 small garlic cloves, crushed with a garlic press
1 teaspoon ground coriander
1 teaspoon salt
1/2 teaspoon black pepper, coarsely ground
24 medium chicken drumsticks (about 6 pounds)
lime wedge (to garnish)

Steps:

  • Preheat over to 450 degrees. From limes, grate 2 tsp peel and squeeze 1/4 cup juice.
  • In small bowl with fork, mix honey, garlic, coriander, salt, pepper, lime juice, and 1 tsp lime peel.
  • Arrange chicken on two 15 1/2" by 10 1/2" jelly roll pans. Drizzle lime mixture over chicken; toss to coat evenly. Place pans on oven racks. 3 tablespoons sesame oil

2 scallions, thinly sliced (about 3 tablespoons)
Kosher salt and freshly ground black pepper
16 chicken wings (about 4 pounds), tips removed, drumettes and flats separated
