BAKED HOMINY PIE

Baked Hominy Pie image

I love hominy, and I wanted to make a pie or quiche using it. Somehow the flavors of the bacon, cheese, and tomatoes crept in. Of course, everything is better with bacon, cheese, and tomatoes, right?

Provided by Susan Feliciano

Categories     Savory Pies

Time 1h

Number Of Ingredients 9

2 large (10" or larger) flour tortillas
2-3 slice pepper bacon, thick sliced
1/2 c onion, thinly sliced
1 can(s) golden hominy, well-drained
3 large eggs, beaten
1/3 c cream or milk
1 c jack or pepper jack cheese, shredded
1/4 tsp each salt and pepper
2 roma tomatoes, thinly sliced

Steps:

  • 1. Preheat oven to 350°F. Spray or brush a 9-inch pie plate with olive oil. Heat tortillas for 20-30 seconds in the microwave or a hot dry skillet to soften them. Place one tortilla in the plate, fitting it in like a piecrust. Spray or brush tortilla with olive oil, then sprinkle with half the grated cheese. Fit the second tortilla over the first. Set aside.
  • 2. Cut bacon into ½-inch pieces. Cook bacon in a skillet until not quite crisp. Remove and drain on paper towels. In rendered bacon fat, cook onion until soft but not browned. Drain well.
  • 3. In a mixing bowl, stir together hominy, beaten eggs, cream, grated cheese, onion, salt, and pepper until well combined. Pour carefully into tortilla shell. Place sliced tomatoes in a single layer on top to cover pie. Top evenly with the bacon.
  • 4. Bake for 25-35 minutes, until eggs are set and tortillas are nicely browned. Check at 15 minutes, and cover edges with foil or a pie guard if tortilla browns too quickly. Allow to cool 15 minutes before slicing. Slice with sharp knife. May be served at room temperature.

HOMITY PIE

Make a veggie showstopper in this homity pie - a creamy potato, onion and cheese pie, with the addition of leeks. Make it your own with more veg, if you like

Provided by Barney Desmazery

Categories     Dinner

Time 1h55m

Number Of Ingredients 13

25g butter
2 onions, finely sliced
1 leek, finely sliced (optional)
1 tbsp thyme leaves (optional)
700g floury potatoes (such as Maris Piper or King Edward), quartered and thickly sliced
150ml double cream
125g mature or extra-mature cheddar, grated
2 spring onions (optional), finely chopped
200g plain flour, plus extra for dusting
50g wholemeal or rye flour
pinch of cayenne pepper (optional)
125g butter
1 egg

Steps:

  • To make the pastry, tip both the flours, a pinch of salt and the cayenne, if using, into a large bowl. Mix, then rub in the butter using your fingertips until the mixture is crumbly. Mix in the egg and 1 tbsp cold water using a cutlery knife. Bring the pastry together into a ball, then cover and chill for 30 mins. Knead briefly until pliable, then roll out until it's large enough to line a 20cm deep pie dish. Line the dish, pushing the pastry into the edge, then trim. Chill until needed.
  • Meanwhile, for the filling, heat the butter in a large saucepan until sizzling and cook the onions with some seasoning and the leeks and thyme, if using, for 12-15 mins until soft and sticky. Stir the potatoes into the onion mix, then reduce the heat, cover and cook for 10-15 mins, stirring occasionally, until the potatoes break down when pressed with a wooden spoon. Pour over the cream, stir for a minute, then turn off the heat and leave to cool a little.
  • Heat the oven to 200C/180C fan/gas 6 with a baking tray inside. Stir half the cheddar and most of the spring onions through the potato and onion mix. Scatter half of the remaining cheddar over the base of the pastry case, then tip in the tip filling. Scatter with the rest of the cheese and spring onions. Bake on the hot baking tray for 40-45 mins until the pastry is deeply golden and the filling is bubbling. Remove from the oven and leave to rest for at least 10 mins. Serve hot, or leave to cool until just warm.

HOMINY PIE - CASSEROLE

Hominy Pie - Casserole image

This is a recipe from The Grange Cookbook I got in the 70's. When our daughter was a toddler, she tried to flush it down the toilet! When she went out on her own, I gave her the cookbook along with my very first one my dad gave me. It is very versatile. I'm listing the original recipe, but through the years I have added different things to it, such as left over squash casserole, Velveeta instead of cheddar, soy sauce, or beef bouillon to make a soup rather than a casserole. I serve it with tortilla chips.

BAKED HOMINY WITH CHEESE

Baked Hominy With Cheese image

The taste and texture of this dish is subtle and unusual but my BF and I think it's absolutely delicious. My apologies if you haven't found this as appealing as we do. The recipe comes from a fantastic cookbook of the midwestern region (of the U.S.) called "Hollyhocks and Radishes." The original ingredients call for 2 cups cream instead of milk and twice the butter, so if you don't mind the extra fat, go ahead. I also like to add more horseradish, at least 1 tablespoon. In my area hominy can be found in the mexican foods section of the supermarket.

Time 1h35m

Yield 4 serving(s)

Number Of Ingredients 7

2 tablespoons butter
4 tablespoons flour
2 cups low-fat milk
2 teaspoons prepared horseradish
2 (15 ounce) cans hominy, drained
salt and pepper
1/3 cup parmesan cheese

Steps:

  • Preheat oven to 300 degrees.
  • Melt butter in large saucepan over medium heat.
  • Whisk in flour and continue cooking for 1 minute.
  • Slowly pour in milk, mixing constantly with whisk, until sauce thickens.
  • Add horseradish, salt and pepper to taste.
  • Add hominy, stir, and pour into lightly sprayed 2 quart casserole.
  • Sprinkle with parmesan cheese.
  • Cover and cook for 1 hour 20 minutes or until hot and bubbly.

Tips:

  • Choose dried hominy: For the best results, use dried hominy rather than canned hominy. Dried hominy has a more intense flavor and a chewier texture.
  • Soak the hominy overnight: Soaking the hominy overnight helps to soften it and reduce the cooking time. If you don't have time to soak the hominy overnight, you can quick-soak it by boiling it for 1 hour, then letting it sit for 1 hour.
  • Use a variety of vegetables: Don't be afraid to experiment with different vegetables in your hominy pie. Some good options include onions, celery, carrots, bell peppers, and corn.
  • Season the pie well: Hominy pie is a flavorful dish, so don't be afraid to season it well. Some good seasonings to use include chili powder, cumin, oregano, and salt and pepper.
  • Bake the pie until the crust is golden brown: The pie is done baking when the crust is golden brown and the filling is bubbling.

Conclusion:

Baked hominy pie is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover hominy. With its simple ingredients and flavorful filling, this pie is sure to be a hit with your family and friends.
