BAKED SALMON WITH HERBED MAYONNAISE
I had baked salmon at a friend's house recently. (She is an Alaskan native and had some salmon she brought back from vacation. Yummy) She spread mayo and some seasonings on the fish then baked it. I had never heard of that before, but it was really good. I came up with my own twist using that idea. I made this last night and it was wonderful. Hope you enjoy!

Steps:
- Combine all ingredients (except salmon).
- Stir well.
- Add a few dashes of seasoning salt and a few grinds of fresh pepper. Taste for seasoning preference. All measurements are approximate.
- Place fish into a baking pan sprayed with oil or rubbed with olive oil or butter.
- Season lightly with seasoned salt and pepper then generously spread mayo mixture all over the top of the fish. Make it to the thickness you prefer. I had about 1/4 in or so.
- Bake uncovered in a 450 degree oven until fish is almost done (mine took 15-20 min for fillets which seemed a bit long, but they weren't done.)
- Then broil until lightly golden.

- Remove salmon from foil pouch, place on plate, and drizzle juices from foil pouch over the fish.

BAKED SALMON WITH HERBED MAYO
This is the only way we fix salmon now! Easy to make for company and they will love it! The mayo keeps it very moist. I have experimented with different herbs, such as basil, oregano and have even added a few shakes of parmesan cheese!

Steps:
- 1. Mix together mayo and dill. If using fresh dill you only need 1 tablespoon. Add salt and pepper to taste.
- 2. Place salmon, skin side down, into a baking pan sprayed with oil or rubbed with olive oil or butter. (I keep the skin on to help keep it from sticking to the pan.)
- 3. Season lightly with seasoned salt and pepper then generously spread mayo mixture all over the top of the fish. Make it to the thickness you prefer. I had about 1/4 in or so.
- 4. Bake uncovered in a 450 degree oven until fish is almost done (mine took 15-20 min for fillets which seemed a bit long, but they weren't done.)
- 5. Then broil until lightly golden.

Steps:
- Preheat oven to 350°F.
- Mix all ingredients, except salmon, together.
- Pour a small amount of the mix into the bottom of a baking pan - just enough to lightly cover the bottom.
- Add the salmon, and pour the remaining mix over top.
- Bake for about 20 minutes, or until salmon flakes easily with a fork.
Tips:
- Use fresh ingredients: The fresher your ingredients, the better your baked herb salmon will taste. Use wild-caught salmon if possible, as it has a more robust flavor than farmed salmon.
- Choose the right herbs: The herbs you use will play a big role in the flavor of your salmon. Some good choices include rosemary, thyme, dill, and oregano.
- Don't overcrowd the baking sheet: Make sure to leave enough space between the salmon fillets so that they can cook evenly. If the fillets are too close together, they will steam instead of bake.
- Don't overcook the salmon: Salmon is a delicate fish, so it's important not to overcook it. The best way to tell if the salmon is done is to insert a fork into the thickest part of the fillet. If the salmon flakes easily, it's done.
- Let the salmon rest before serving: Once the salmon is cooked, let it rest for a few minutes before serving. This will help the juices redistribute throughout the fish, resulting in a more moist and flavorful dish.
Conclusion:
Baked herb salmon is a delicious and healthy meal that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy weeknight meal, give baked herb salmon a try.
