My family loves ham like this. Sweetly seasoned ham roasted with moist heat is a delicious way to celebrate special occasions. If using a pre-cooked ham, follow the directions on the package for baking times.

HONEY BOURBON HORSERADISH GLAZED HAM

Honey Bourbon Horseradish Glazed Ham image

I posted this recipe for the glaze. It will work on any size ham, but cooking times will vary depending on the size and how you like to cook your ham. It is a thick, rich glaze. I only use the water packaged with the ham when I make it.

GLAZED HAM WITH HORSERADISH CREAM

Glazed Ham with Horseradish Cream image

The anchor for our sumptuous spread is a glazed bone-in ham. It's basted with a spicy-sweet blend of honey, fresh horseradish, and allspice, which helps burnish and crisp the skin. Horseradish cream amplifies the flavors in the glaze.

Categories     Food & Cooking     Ingredients     Meat & Poultry     Pork Recipes

Time 4h30m

Number Of Ingredients 8

1 smoked ham (10 to 14 pounds), bone in and rind on
2/3 cup lightly packed grated fresh horseradish (from a 6-inch piece of peeled horseradish root), divided
1/2 cup honey
1/4 teaspoon ground allspice
Coarse salt and freshly ground pepper
1 cup creme fraiche
1 tablespoon chopped fresh thyme leaves
1 tablespoon finely chopped shallot

Steps:

  • Preheat oven to 350 degrees with rack in lower third. Rinse and dry ham and wrap first in parchment, then in foil, making sure thicker rind faces up. Place on a wire rack set in a rimmed baking sheet or roasting pan and bake 1 1/2 hours.
  • Meanwhile, stir together 1/3 cup horseradish, honey, allspice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a small bowl and set aside.
  • Remove ham from oven and unwrap. When cool enough to handle, peel rind from ham with a paring knife, trimming fat all over to about 1/2 inch. (It doesn't need to be perfectly even; the bottom will have less fat and more skin.) Pat dry. With the tip of the knife, score the skin with 1/4-inch-deep parallel lines, 1 to 2 inches apart. Then score skin in the opposite direction to create a diamond pattern. Return to oven and bake 30 minutes. Baste with honey-horseradish mixture and continue to bake, basting every 30 minutes, until a thermometer inserted into thickest part of flesh near (but not touching) bone registers 145 degrees, about 2 hours more. If necessary, add water to pan, about 1/4 cup at a time, to prevent pan from scorching, and tent with foil if ham begins to blacken.
  • Meanwhile, stir together creme fraiche, remaining 1/3 cup horseradish, thyme, and shallot. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Transfer ham to a serving platter and let rest at least 20 minutes. Serve with horseradish cream.

Time 3h25m

Yield 8 to 10 servings

Number Of Ingredients 3

1 10-pound bone-in smoked ham (with water added)
1 1/2 cups packed light brown sugar
1/2 cup clover honey

Steps:

  • Adjust the oven racks to accommodate a large roasting pan. Fit the pan with a shallow roasting rack. Preheat the oven to 350 degrees F.
  • Unwrap the ham and rinse it under cold water. Place it on the rack in the roasting pan. Cover with foil and bake 1 hour 40 minutes. Meanwhile, combine the brown sugar and honey in a saucepan and cook over medium heat until the mixture is smooth and the sugar has dissolved.
  • Pour the brown sugar glaze over the ham and continue roasting1 hour 40 minutes more, basting at least twice with the drippings in the roaster. (To adjust the total roasting time for a smaller or larger ham, calculate 20 minutes per pound.) Check for doneness by inserting a meat thermometer into a meaty spot (not into fat or touching the bone)-it should register 160 degrees F.
  • Let the ham stand 15 minutes before slicing to allow the juices to set. (You can make the ham up to 2 hours ahead; tent with foil and serve at room temperature.)

Tips:

  • Choose the right ham: For the best results, use a fully cooked ham that is at least 10 pounds. A larger ham will take longer to bake, so adjust the cooking time accordingly.
  • Score the ham: Scoring the ham helps the glaze penetrate the meat and creates a crispy exterior. Use a sharp knife to make shallow cuts in the ham in a diamond pattern.
  • Make the glaze ahead of time: The horseradish glaze can be made up to 3 days in advance. This will allow the flavors to meld and develop.
  • Baste the ham regularly: Basting the ham with the glaze during baking helps to keep it moist and flavorful. Baste the ham every 15-20 minutes.
  • Let the ham rest before slicing: Once the ham is baked, let it rest for 15-20 minutes before slicing. This will help the juices redistribute and make the ham easier to slice.

Conclusion:

Baked ham with horseradish glaze is a classic holiday dish that is sure to impress your guests. With its sweet and tangy glaze, tender meat, and crispy exterior, this ham is a perfect centerpiece for any special occasion. So next time you're looking for a delicious and easy-to-make holiday dish, give this baked ham with horseradish glaze a try. You won't be disappointed!
