Steps:
- Preheat the oven to 325 degrees F.
- Place the ham in a small roasting pan, cut-side down, and pour 1/2 cup water into the bottom of the pan. Cover the pan tightly with foil. Bake until the ham is heated through, about 1 1/2 hours.
- Meanwhile, combine the honey, brown sugar, butter, Dijon mustard, whole-grain mustard and thyme in a small saucepan. Cook over medium-low heat until the sugar has dissolved, about 2 minutes.
- Increase the oven temperature to 375 degrees F. While the ham is still hot, remove the foil and carefully pour off the water from the roasting pan; it is fine if a little water remains. Brush about half of the glaze over the ham. Return to the oven, uncovered, for 5 minutes, until the ham is golden brown and beginning to glaze. Brush with the remaining glaze and bake for another 7 to 10 minutes, until the ham is well-browned and glazy; be careful not to let the glaze burn. Serve warm.
BROWN SUGAR AND MUSTARD HAM GLAZE
This is a recipe that my mother used to use for her holiday baked ham. It is a wonderful sweet and sour glaze. The best part is that you can adjust it to be sweeter by using more brown sugar or sour by using more mustard.

Steps:
- 1. Preheat oven to 325 degrees. Take the ham out of the refrigerator and let sit on the counter for 30 minutes to cut the chill.
- 2. Over med-low heat, melt butter in a small saucepan.
- 3. Add the brown sugar and mix into the melted butter.
- 4. Then add the mustard.
- 5. Once the mustard is incorporated, cook on med-low heat stirring constantly for a few minutes until the sugar melts and is a loose consistency. Make sure it does not boil. (You don't want to make caramel.)
- 6. Unwrap the ham. Place in a roasting pan. Brush about 1/2 of the glaze on the ham.
- 7. Separate the slices and get the glaze in-between the layers. Set the rest aside for later.
- 8. Push the layers back together and cover the ham tightly with foil to keep the moisture in. Bake for about 15 minutes per pound. Bear in mind, the ham is fully cooked. You're not actually cooking the ham, only reheating it.
- 9. Using drippings, baste every 30 minutes, or as often as you like, with a spoon or a brush.
- 10. In the last 15 to 20 minutes, do one final glaze of the ham. Before glazing, stir and reheat the leftover glaze for a couple of minutes on medium-low.
- 11. Take out the ham out of the oven and pour the reheated glaze onto the ham.
- 12. Brush glaze across the ham to spread it out.
- 13. Increase the temperature to 350 and cook uncovered for a final 15 to 20 minutes.
- 14. In order to easily serve the ham, cut in a circular motion around the bone deep into the ham and the slices will come right off.

Tips:
- Choosing the right ham: Select a fully cooked ham, either shank or butt portion, with a weight between 8 to 10 pounds for optimal results.
- Preparing the ham: Remove the ham from its packaging and rinse it under cold water. Pat dry with paper towels to ensure an even glaze application.
- Scoring the ham: Use a sharp knife to score the ham in a diamond pattern across the fat side, about 1/4 inch deep. This will help the glaze penetrate and enhance the flavor.
- Brown sugar and mustard glaze: In a mixing bowl, combine brown sugar, Dijon mustard, orange juice, honey, and spices. Mix well to create a thick and flavorful glaze.
- Applying the glaze: Brush the prepared glaze onto the scored ham, ensuring an even coating. Be generous with the glaze application, as it adds both flavor and moisture to the ham.
- Baking the ham: Preheat the oven to 325°F (165°C). Place the ham in a roasting pan with a rack to allow the juices to drain. Cover the ham loosely with aluminum foil to prevent excessive browning and drying out.
- Cooking time: Bake the ham for approximately 2 hours, or until the internal temperature reaches 140°F (60°C) as measured with a meat thermometer inserted into the thickest part of the ham.
- Resting the ham: Remove the ham from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute and ensures a tender and moist texture.
Conclusion:
This baked ham with brown sugar and mustard glaze is a classic dish that combines sweet, tangy, and savory flavors. The combination of brown sugar, mustard, and spices creates a delicious glaze that complements the smoky and salty ham perfectly. By following these tips and instructions, you can easily prepare a juicy and flavorful ham that will be a hit at any gathering.
