Categories     Fish     Tomato     Quick & Easy     Summer     Gourmet

Yield Makes 2 servings

Number Of Ingredients 8

2 tablespoons extra-virgin olive oil
1 (1-lb) piece grouper or red snapper fillet (3/4 inch thick), skinned and halved crosswise
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup coarsely chopped tomato
1 small garlic clove, minced (optional)
2 tablespoons thinly sliced fresh basil
Accompaniment: fresh corn spoon bread

Steps:

  • Working off heat, put 1 tablespoon oil in a 10-inch nonstick skillet and add fish, turning to coat with oil on both sides. Arrange fish skinned sides down and sprinkle with salt and pepper.
  • Toss together tomato, garlic (if using), basil, remaining tablespoon oil, and salt and pepper to taste in a small bowl, then mound on top of fish. Cover skillet with a tight-fitting lid and cook fish over moderately high heat until just cooked through, about 8 minutes.

Tips:

  • Choose Fresh Grouper: For the best results, select fresh grouper fillets. Look for firm, opaque flesh with a mild, briny aroma.
  • Season Generously: Don't be shy with the seasonings. A blend of salt, pepper, garlic powder, and paprika adds depth of flavor to the fish.
  • Use Ripe Tomatoes: The chunky tomato sauce is the star of this dish. Use ripe, flavorful tomatoes for the best results. Roma tomatoes are a good choice.
  • Sauté the Vegetables: Before adding the tomatoes, sauté the onions, garlic, and bell pepper until they are softened. This step helps to develop their flavor and sweetness.
  • Simmer the Sauce: Allow the tomato sauce to simmer for at least 15 minutes. This allows the flavors to meld and deepen.
  • Bake the Grouper: Nestle the grouper fillets in the chunky tomato sauce and bake until the fish is cooked through and flakes easily with a fork.
