ROASTED SUMMER VEGETABLES
Steps:
- Preheat the oven to 375 degrees F.
- Trim the ends of the zucchinis and cut them diagonally in 3/4-inch-thick slices. (The slices will seem large, but they¿ll shrink while they cook.) Cut the peppers lengthwise in 1 1/2-inch-wide slices, discarding the core. Trim off the fennel stalks and cut the bulb through the core in 1-inch wedges. (Cutting through the core keeps the pieces intact.) Peel the onion and slice it in 1/4-inch-thick rounds, leaving the slices intact.
- Place the vegetables in groups on a sheet pan. Drizzle with the olive oil, add the garlic, and toss gently to be sure the vegetables are lightly coated with oil. Spread the vegetables in one layer on 2 sheet pans. (If they¿re crowded, they¿ll steam rather than roast.) Sprinkle with the salt and pepper and place the thyme sprigs on top. Roast for 15 minutes. Turn each piece and put the pans back in the oven for 5 to 10 minutes, until all the vegetables are crisp-tender. Sprinkle with extra salt and serve hot or at room temperature.

Tips for Baking Green Vegetables:
- Choose the Right Vegetables: Select green vegetables that are firm and fresh. Avoid wilted or bruised ones.
- Prepare the Vegetables: Wash and trim the vegetables as needed. For vegetables like broccoli and cauliflower, cut them into bite-sized florets.
- Season and Toss: Drizzle the vegetables with olive oil or melted butter. Sprinkle with salt, pepper, and any desired herbs or spices. Toss to coat evenly.
- Roast at High Heat: Preheat your oven to a high temperature, typically between 400°F and 450°F. This helps to quickly caramelize the vegetables and create a crispy texture.
- Watch the Cooking Time: Baking times may vary depending on the type and size of the vegetables. Start checking the tenderness of the vegetables after about 15-20 minutes. They should be tender but still have a slight bite to them.
- Add Extras for Flavor: For added flavor, consider incorporating ingredients like lemon zest, garlic cloves, or grated Parmesan cheese before baking.
Conclusion:
Baking green vegetables is a simple and delicious way to enjoy these nutritious foods. By following these tips, you can achieve perfectly roasted vegetables that are tender, flavorful, and visually appealing. Whether you serve them as a side dish or incorporate them into a main course, baked green vegetables are a great addition to any meal.
