Provided by Kare for Kitchen Treaty

Time 35m

Number Of Ingredients 16

1 pound zucchini (cut into 4" - 5" sticks)
1/4 cup all-purpose flour
2 eggs
2 cups Panko breadcrumbs
1/2 teaspoon Kosher salt
1/4 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon cayenne pepper (or less or more depending on your heat preference)
2 tablespoons olive oil
1 cup Greek yogurt
1 small clove garlic (minced)
1 tablespoon fresh chopped dill
1 teaspoon lemon zest
1 teaspoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Make the dip
  • In a small bowl, blend together the yogurt, garlic, dill, lemon zest, lemon juice, salt, and pepper. Cover and refrigerate for at least an hour to allow the flavors to meld.
  • Make the zucchini fries
  • Heat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone mat.
  • Prepare your ingredients: Place flour in a large Ziploc bag. Crack eggs into a shallow dish and whisk along with 2 tablespoons water. Mix Panko breadcrumbs, salt, pepper, garlic powder, and cayenne pepper in a shallow dish.
  • Add zucchini to the Ziploc bag with flour and shake gently until all pieces are covered.
  • Working with three or four sticks at a time, dip the zucchini sticks in the egg mixture then place in the Panko mixture, turning to coat. Gently lay on the baking sheet. Repeat, mixing the Panko breadcrumbs often to keep spices distributed, until all pieces are coated.
  • Evenly drizzle olive oil on top of fries.
  • Bake for 15 - 20 minutes until all sides are golden brown.
  • Serve immediately with dip.

SPICY BAKED SWEET POTATO FRIES WITH COOL GREEK YOGURT RANCH

Spicy Baked Sweet Potato Fries with Cool Greek Yogurt Ranch image

These addicting baked sweet potato fries crisp up nicely in the oven. Dip them in a healthy garlicky dill ranch and you're good to go. Just reduce or leave out the sugar and spices if you prefer a less-spicy version.

Provided by Kare for Kitchen Treaty

Time 45m

Number Of Ingredients 15

2 medium sweet potatoes
2 tablespoons corn starch
2 tablespoons olive oil
1 tablespoons pure maple syrup or brown sugar
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/8 teaspoon cayenne pepper (add more for more heat)
1/4 teaspoon kosher salt or fine-grain sea salt + more to taste
3/4 cup Greek yogurt (I use full-fat)
2 teaspoons white wine vinegar or champagne vinegar
1-2 garlic cloves (smashed and finely minced (about 2 heaping teaspoons))
2 tablespoons finely chopped onion
1 tablespoon fresh minced dill
1/2 teaspoon kosher salt (plus more to taste)
1/4 teaspoon freshly ground black pepper (plus more to taste)

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Scrub sweet potatoes or peel off the skin, if you desire (I like to leave it on). Cut sweet potatoes into approx. 1/4-inch matchsticks. Put sweet potatoes into a large bowl and sprinkle the cornstarch over the top. Toss with your clean hands until all of the fries are coated. Drizzle with olive oil and toss again. Add maple syrup or brown sugar, chili powder, cinnamon, cayenne pepper, and salt. Toss until all of the fries are coated.
  • Lay fries on a baking sheet, making sure there is a little space around each fry - don't crowd or pile them! Depending on the size of your baking sheet, you may need to use two (I do).
  • Place in oven and bake until golden brown and many are crisp, about 25 minutes, turning carefully at right around the 15 minute mark. Remove fries from oven and let cool a bit.
  • While the fries are baking, make your ranch dip. In a small bowl, stir together all of the dip ingredients. Taste and add more salt and pepper if desired.
  • Add more salt to the fries if you like. Serve warm with the ranch dip.

Tips:

  • Select the Right Potatoes: Choose large, starchy potatoes like Russet or Yukon Gold for the best results. They hold their shape well during baking and become crispy on the outside while staying fluffy on the inside.
  • Cut the Potatoes Evenly: Uniformly cut potato wedges or fries ensure even cooking. Aim for pieces that are about 1/2 inch thick and 3-4 inches long.
  • Soak the Potato Wedges: Soaking the potato wedges in cold water for 30 minutes before baking removes excess starch, resulting in crispier fries. Be sure to pat them dry thoroughly before tossing them with oil and seasonings.
  • Use High Heat: Preheat your oven to a high temperature (400°F or higher) to achieve crispy fries. This creates an initial sear that helps develop a golden-brown crust.
  • Toss the Potatoes in Oil and Seasonings: Before baking, toss the potato wedges or fries with olive oil, salt, and pepper. You can also add additional seasonings like garlic powder, paprika, or dried herbs for extra flavor.
  • Don't Overcrowd the Pan: To ensure even cooking and crispy fries, avoid overcrowding the baking sheet. Spread the potato wedges or fries in a single layer, leaving some space between them.
  • Flip the Fries Halfway Through Baking: For evenly browned and crispy fries, flip them halfway through the baking time. This helps ensure that both sides get a chance to crisp up.
  • Serve Immediately: Greek fries are best enjoyed hot and crispy. Serve them immediately with your favorite dipping sauce, such as tzatziki, ketchup, or mayonnaise.

Conclusion:

With these tips in mind, you can easily create delicious and crispy Greek-style fries at home. Experiment with different seasonings to find your favorite flavor combination. These fries are perfect for a party appetizer, a side dish with grilled meats, or a snack on their own. Enjoy the crispy texture, savory flavors, and versatility of these delightful Greek fries.
