125 g / 1 US stick unsalted butter (, softened)
2 tsp fresh garlic (, minced (~3 - 4 cloves, pack the teaspoon))
1/2 tsp salt
2 tsp finely chopped parsley ((optional))

Steps:

  • Preheat oven to 200C/390F.
  • Cut the French stick in half. Then cut the bread almost all the way through into 2cm / 4/5" thick slices.
  • Mix together the butter, garlic, salt and parsley. Taste to see if it's salty / garlicky enough for your taste (Note 2).
  • Smear garlic butter over cut side of bread (Note 2).
  • Smear remaining butter on the top and sides of the bread.
  • Wrap each bread in foil.
  • Bake for 15 minutes until the crust is crispy (check through foil).

2 tablespoons olive oil or 2 tablespoons clarified butter
1/8 teaspoon salt
1/8 teaspoon black pepper
1 French bread, loaf sliced and heated
6 ounces cream cheese (or soft cheese or 1/2 cup butter, softened)

Steps:

  • Heat the oven to 350 degrees F.
  • Trim the tops of the garlic heads, leaving them whole but removing about 1/4 inch. Remove excess dry skins.
  • Rub the heads with a little of the butter or oil and put in a very small baking dish or crock the size of the four heads.
  • Drizzle with the rest of the oil or butter, sprinkle with salt and pepper, cover loosely, reduce heat to 275 degrees F and bake for 20 minutes.
