4 teaspoons olive oil, divided
3 tablespoons butter
6 salmon fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 to 3 tablespoons lemon juice
1 teaspoon minced fresh parsley
1/4 teaspoon minced fresh rosemary

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut top off garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. , Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. , Squeeze softened garlic into a food processor; add butter and remaining oil. 1 teaspoon ground black pepper

3 cloves garlic, minced
6 (4 ounce) fillets cod
2 tablespoons lemon pepper

  • Preheat oven to 350 degrees F (175 degrees C).

1 tablespoon chopped fresh herbs, or to taste
salt and ground black pepper to taste
⅓ cup sour cream
¼ cup grated Parmesan cheese
2 tablespoons melted butter

  • Preheat the oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray it with cooking spray.

2 pollock fillets, fresh or frozen
1/2 cup plain breadcrumbs
2/3 teaspoon salt
3/4 teaspoon black pepper
1 teaspoon garlic powder
3/4 teaspoon rubbed sage
1 teaspoon unsalted butter, divided

Steps:

  • If your fillets are frozen, thaw in advance.
  • When your fillets are ready to prepare, preheat your oven to 350F degrees and lightly grease a shallow pan.
  • Melt your butter, and set aside.
  • Take a large plate (NOT PAPER) and pour breadcrumbs on to plate.
  • Add spices to breadcrumbs and mix through with your fingers.
  • Add butter to breadcrumbs and mix through with fingers again.
  • Melt the other 1/2 teaspoon butter.
  • Take melted butter (allow to cool a little so you do not burn your fingers!!!) and lightly spread over the fillet and then roll fillet in breadcrumbs.
  • Pat breadcrumbs into both sides of the fillet over and over again until nicely coated.
  • Put fillets on pan and bake for 20 minutes, or until fish flakes nicely.
