Parmesan Oven Roasted Tomatoes are one of our favorite summer dish dishes! Ripe juicy garden tomatoes topped with a delicious garlicky parmesan crust and baked just until hot.

3 large ripe tomatoes (halved)
1 slice bread ( or ¾ cup fresh bread crumbs)
¼ cup parmesan cheese (freshly grated )
1 clove garlic (minced)
1 tablespoon olive oil
3 tablespoons of fresh herbs ((parsley, basil and oregano (or 1/2 teaspoon each dried basil & dill))
salt & black pepper to taste

Steps:

  • Preheat oven to 400°F.
  • Using a blender, food processor or Magic Bullet, process the bread into fresh breadcrumbs. (This took about 1 second in my Magic Bullet).
  • In a small bowl, combine breadcrumbs, cheese, garlic, olive oil, herbs, salt and pepper. Toss until well mixed.
  • Place sliced tomatoes in a shallow baking dish, season with salt & pepper. Top with breadcrumb mixture.
  • Bake for 10-15 minutes or until crumbs are lightly browned. Be sure not to over bake so the tomatoes don't become mushy.

4 large cut into 1/4-inch slices Vidalia onion
4 cut into 1/4-inch slices beefsteak tomatoes
1 1/2 teaspoons divided salt
1/2 teaspoon black pepper
1/2 tablespoon dried oregano
1 1/12 cups shredded cheddar cheese
3/4 cup made from stale bread bread crumbs
2 tablespoons melted, plus 1 tablespoon for greasing baking dish butter

Steps:

  • Preheat oven to 375 °F.
  • Grease a shallow 2-quart baking dish with butter. In a medium skillet, heat the oil over medium heat. Add the onions and cook until golden and soft, about 5 minutes. Sprinkle with a pinch of salt.
  • Layer half of the tomatoes in the baking dish and top with half the onions, 1/2 teaspoon salt, half the black pepper, half the oregano and half the cheddar. Repeat with the remaining tomatoes, onions, 1/2 teaspoon salt, black pepper, oregano and cheddar.

2 tablespoons extra-virgin olive oil
3 garlic cloves, chopped
1 medium onion, chopped
1 3/4 pounds fresh vine-ripened or heirloom tomatoes, cut into 1/2-inch pieces
3 tablespoons chopped fresh chives
1 cup (packed) freshly grated Parmesan cheese
1 cup (packed) freshly grated Romano cheese

1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
1/4 cup minced scallions, white and green parts (2 scallions)
1/4 cup minced fresh basil leaves
2 tablespoons minced fresh flat-leaf parsley
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon fresh thyme leaves
Kosher salt
Freshly ground black pepper
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the cores from the tomatoes, removing as little as possible. Cut them in half crosswise and, with your fingers, remove the seeds and juice. Place the tomato halves in a baking dish.

1 3/4 lbs tomatoes
