4 (4 -5 ounce) tilapia fillets, thawed if frozen and patted dry with paper towels
kosher salt

1 lemon, juice of
1 lb cauliflower, cut into florets

1 pint grape tomatoes, halved

Steps:

  • Preheat oven to 400 degrees F; line 2 baking sheets with aluminum foil and cut off an additional 4 squares of foil to make fish packets.
  • Melt butter in olive oil over low heat; brush foil squares with just a small amount of this mixture (the remainder will be used for the sauce) - alternatively, you can spray the foil with cooking spray.
  • Season both sides of the fish with salt and pepper; lay one fillet on each foil square and grate the lemon zest over each.
  • Close up packets and arrange on a prepared baking sheet; bake until fish flakes easily with a fork, 20 to 25 minutes.
  • Meanwhile, place cauliflower florets, onion, and tomatoes in a bowl and drizzle with olive oil; arrange, in a single layer, on the other prepared baking sheet.
  • Season vegetables with salt and pepper and roast until cauliflower just begins to brown on the edges and tomatoes soften and collapse, about 15 minutes.

1/4 cup cider vinegar
1/4 cup yellow mustard
1 tablespoon chopped fresh dill, or 1 teaspoon dried
2 Italian parsley sprigs
1/2 teaspoon olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Rinse the fish and pat very dry. Make two slashes into the skin on each side of the fish.
  • Whisk together the cider vinegar, mustard and dill in a medium sized bowl. Place two cloves of garlic and a sprig of parsley into the cavity of each fish. Place the fish in the bowl and turn to coat in the vinegar mixture.
  • Use two pieces of foil to form two sections in a baking dish. Rub the foil with olive oil.
  • Place one fish in each section and drizzle remaining vinegar mixture into the fish cavity and the slashes on the top side of the fish.
  • Bake 15-20 minutes until the fish flakes easily with a fork (thickest part of fish should be 145 degrees). Fish will continue cooking five minutes after you remove it from the oven.

  • Preheat the oven to 375 degrees F (190 degrees F). Grease a 9x13 inch baking dish.

1 lb red onion, cut into 1/8-inch slices
3 tablespoons lemon juice
1 tablespoon minced gingerroot
1 tablespoon olive oil
2 large lemons
3 tablespoons fresh cilantro (or 2 Tbs.. coriander)
salt and pepper

Steps:

  • In large bowl, combine onions with lemon juice and ginger. Arrange a few onion slices on the bottom of a baking dish(reserve some). Rinse Tilapia, pat dry with paper towel, brush outside with oil, lay fish on top of the onion mixture.
  • Cut off about 1/2 inch from each of the lemons. Stuff the fish cavity with reserved onions, lemon ends and half of the cilantro. Cut remaining lemons into thin slices; tuck slices around base of fish and sprinkle remaining cilantro over onions and lemons in dish.
  • Bake, uncovered, in a 400°F oven until fish temperature reaches 135°F and flesh in opaque and flaky. Gently pull off skin and serve fish with onions and a fresh lemon slice. Add salt and pepper to taste.

½ cup all-purpose flour
1 cup dry bread crumbs

½ teaspoon onion powder

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Line an 11-17-inch baking sheet with aluminum foil and lightly spray with cooking spray.

4 tilapia fillets
4 slices bacon
1 tablespoon olive oil
1/4 cup chopped red onion
1/4 cup chopped red pepper
3 tablespoons plain crushed breadcrumbs
1 tablespoon lemon juice
1 tablespoon light brown sugar
1 tablespoon minced garlic
1 teaspoon dried parsley flakes
1/4 teaspoon black pepper
1 pinch salt
1 lb fresh green beans
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • 1. In a small sauce pan heat the oil. When heated add the onions and fry for 2-3 minutes or until translucent.
  • 2. Add the red peppers, lemon juice, brown sugar, garlic, parsley, black pepper and salt. bring the mixture to a boil, then reduce to a simmer and cook 5 minutes, or until the peppers are tender.
  • 3. While the mixture cooks prepare your baking dish. (I use a disposable aluminum 8x8 in square cake pan because i dont like bacon grease on my good pans) Cut srips of reynolds wrap the size or your baking dish about 6 will be fine. Crinkle the strips of foil and securely place them in the bottom of your dish to make racks.
  • 4. Remove the pepper mixture and process in a food processor (or blender) until smooth.
  • 5. Return the mixture to the pan and stir in the bread crumbs until combined.
  • 6. Spread the mixture evenly among the 4 Tilapia filets and roll them up. Wrap them in bacon using one strip of bacon per filet. If needed secure them in place with toothpicks.
  • 7. Place the filet rolls over the racks to let the grease drain. Cover with reynolds wrap foil and bake in the preheated oven for 20 minutes.
  • 8. In another baking dish spread the green beans evenly apart and sprinkle the top with pamesan cheese.
  • 9. After the 20 minutes remove the filets and turn on the broiler. Remove the foil cover from the filets. Put the green beand and filets under the broiler and broil until the top of the bacon is crispy. Turn the filets to crisp the bottom side. If the cheese is burning too badly, take out the beans. when both sides f the bacon are crispy, take them out.
  • Serve the tilapia with a big side of green beans and enjoy.

My kids love it and I don't think they realize they're eating 'fish'. They don't need to know as long as they like it and eat it. lol. Using the tilapia is the best cuz of the lightness of the fish. The distinctiveness of the cilantro will give it a great fresh herb taste.

4 thawed tilapia fillets
6 tablespoons sesame oil (separate in 2 parts so only use 3Tbsp, save the remaining.)
1/2 cup soy sauce (preferably low sodium)
1/4 cup rice wine vinegar
2 tablespoons honey
2 tablespoons water
2 garlic cloves, grated
1 slice fresh ginger, grated (primarily the size of the 2 garlic cloves)
1 whole lemon zest
salt or pepper
1 zucchini (halved vertically and sliced)
1 onion (halved or sliced long)
4 scallions (sliced long on an angle)
1 bunch fresh cilantro (coarsely chopped)

Steps:

  • Preheat oven 375.
  • Make the marinade. Make sure to only use 3Tbsp of the sesame oil. This should make a little over 3/4cup of sauce but out of that put aside 1/4 cup for the veggies and the rest is needed for the fish.
  • Add in all the veggies and a handful of cilantro in a mixing bowl. Sprinkle in Salt/pepper, LEMON ZEST, 1/4 cup of the marinade and toss. Put to the side.
  • Lay down the REYNOLDS FOIL in the baking dish.
  • Pour the other part of the sesame oil (3Tbsp).
  • Lay the TILAPIA and you can overlap the thinner sides.
  • Pour the remaining part of the marinade over the fish.
  • Spread the veggie mixture covering the fish.
  • Cover the foil but leave a small air pocket.
  • Bake 12--15 minutes.

2 lemons, thinly sliced
1/4 cup sunflower oil
1/4 cup orange juice

4 sheets Reynolds Wrap Foil, 12X12, heavy duty
2 cups long grain rice
4 cups water
1 tablespoon sunflower oil

  • Cook the rice (stove top or rice maker), add the tumeric and salt to the cooking water, the rice will turn a beautiful yellow color. When cooked, let it cool off, can be made ahead.
  • Mix the marinade for the tilapia filets: oil, citrus juices and a dash of mexican oregano, marinate fish filets for up to one hour, not more or the fish will "cook" in the juice.
  • Lay out 4 12 X 12 squares of heavy duty reynolds wrap, put 3-4 slices of lemons on one side of each and top with the fish filets. Season with salt and lemon pepper and spoon the marinade over. Fold the second half over and crimp the sides tightly, tuck the ends under.
  • Lay the packages on a baking sheet and bake @ 375 for 12 - 15 minutes. Let the package rest for a few minutes, then open carefully, watch out for steam escaping.
  • In the meantime, heat a tbsp of oil in a heavy skillet and saute the onions until golden. Add the peppers, corn and jalapeno and cook until soft, Add the rice and black beans and heat through. Season with salt and cumin.
  • To serve, spoon a portion of rice on each plate, lay the fish on top, spoon the accumulated sauce over the fish and rice, garnish with the lemon slices and sprinkle some chopped cilantro over. Enjoy!
