BAKED FISH SUPREME

Baked Fish Supreme image

I got the original recipe for this fish from a Jr. League cookbook back in the late 80's. I've adapted it a little to our taste. My kids love this and actually request it. I live on the coast and use fresh fish when I can but I also use the frozen tilapia sold in the grocery stores. I find it on sale a lot and it turns out just...

Provided by Karen McDaniel

Categories     Fish

Time 30m

Number Of Ingredients 6

1 stick butter, salted (real butter - not margarine; it won't work)
1 tsp worcestershire sauce
1 Tbsp parmesan cheese
1/2 juice from 1 lemon
1 tsp cajun seasoning
5 tilapia fillets

Steps:

  • 1. Pre-heat oven to 350 degrees. Place the stick of butter in a 9x13 casserole dish and place in oven while it's pre-heating. This is the key to this dish. You want to brown the butter until it's almost burned but NOT burned. It takes a few minutes to start browning but once it starts - it happens quick. I usually swirl the dish around so the butter browns evenly. Once it's all brown, take it out and set on the counter. (leave a pot holder on the sides of the dish so you remember it's HOT)
  • 2. Place the fish fillets in the browned butter. Sprinkle each fillet with the lemon juice, Worcestershire and then the Cajun seasoning. Place back in oven and let cook for about 5 minutes.
  • 3. Pull dish from oven and carefully turn fillets over. Repeat with the seasonings and this time, add the Parmesan cheese. Place back in oven and let cook until the fish is white and flaky throughout.
  • 4. When serving, after the fish is removed from the dish; pour the remaining butter into small containers and serve with the fish to dip it in.

3 tablespoons lemon juice
2 garlic cloves, chopped
stock, strained from pan
1 teaspoon fish stock
1 teaspoon chicken stock
2 teaspoons cornflour
200 ml light cream
3 tablespoons double cream
1 1/2 tablespoons sherry wine
1 teaspoon tarragon
2 teaspoons parsley
1 1/2 cups gruyere cheese
2 tablespoons parmesan cheese
1 1/2 cups peas
220 g cooked shrimp, peeled (any you like salad shrimp or medium sized)
pepper
buttered breadcrumbs
3 tablespoons parmesan cheese, for the top

  • Add wine, water, garlic, onion, tarragon, parsley, lemon juice to a pan bring to boil. Turn down the heat add cod fillets and simmer until tender about 7-10 Min's.

Add both stocks and sherry stir, in a glass combine cornflour with a little water, add to pan and stir until mixture thickens. Add both the creams, tarragon and parsley stir to mix. Then add the Parmesan cheese and stir until melted, add Gruyere half a cup at a time and stir after each addition until cheese melts, add pepper to taste, remove from heat.
  • In a large bowl put cod, peas and shrimp pour sauce over and stir gently to combine as you don't want the cod flaking into to small chunks. Place mixture either into individual serving dishes or large oven proof casserole dish. Top with buttered breadcrumbs and sprinkle remaining Parmesan cheese on top. Bake oven for 20-25 Min's or until golden brown at 180c-190c.

CRISPY BAKED FISH WITH TARTAR SAUCE

Crispy Baked Fish With Tartar Sauce image

Charming fish shacks and salty sea air aren't a weeknight possibility for most of us, but thankfully, this recipe is. It features a clever technique from recipe developer Molly Kreuger: Creamy tartar sauce is spread on the fish to add flavor, keep the fillets moist during cooking and help the bread crumbs adhere to the fish. (Feel free to use your favorite tartar sauce in place of the one below.) The fish is baked until nearly cooked through, then broiled to toast the breadcrumb topping. The end result is crispy, creamy, tangy and moist, all of which is achieved without having to deal with a big pot of oil. Eat with more tartar sauce and a squeeze of lemon.

Categories     dinner, weekday, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 11

1 cup mayonnaise
5 tablespoons capers, drained and coarsely chopped
1/4 cup finely chopped pickles (such as cornichons or half sour)
2 tablespoons finely chopped tarragon, dill or parsley
1 teaspoon Worcestershire or soy sauce
1 small garlic clove
1 large lemon
Kosher salt and black pepper
1/2 cup panko bread crumbs
2 tablespoons extra-virgin olive oil, plus more for greasing
4 (6-ounce) thick white fish fillets, such as halibut or cod (skin on or off)

Steps:

  • Heat the oven to 400 degrees and set a rack in the upper part. In a medium bowl, stir together the mayonnaise, capers, pickles, herbs and Worcestershire sauce. Using a Microplane, finely grate the garlic into the bowl, then grate in the zest of the lemon. (Hold onto the lemon; you'll use the juice later.) Stir to combine and season the tartar sauce to taste with salt and lots of pepper.
  • In a small bowl, stir together the panko and olive oil; season with salt and pepper.
  • Pat the fish dry on all sides and season lightly all over with salt and pepper. Transfer to a lightly greased or foil-lined sheet pan. Coat the top with a thin layer of the tartar sauce (a scant tablespoon per fillet). Sprinkle the panko evenly on top (about 2 tablespoons per fillet), pressing gently to adhere.
  • Bake the fish on the top rack until almost cooked through, 10 to 15 minutes for fillets between ½- and ¾-inch-thick (though you should check earlier, if using a thinner fish). An instant-read thermometer should read somewhere between 125 and 130 degrees when inserted into the thickest part of the fish.
  • Meanwhile, add 1 tablespoon juice from the lemon to the tartar sauce and cut the remaining lemon into 4 wedges for serving.
  • When the fish is nearly cooked through, switch the oven to broil. Broil the fish on the top rack until the bread crumbs are golden and the fish flakes easily and registers 140 degrees in the thickest part, 2 to 3 minutes. Eat with a spoonful of tartar sauce, more black pepper and a squeeze of lemon. (Any extra tartar sauce will keep for up to a week in the fridge.)

Tips:

  • Use firm-fleshed fish fillets or steaks that will hold their shape when baked, such as salmon, cod, halibut, or tilapia.
  • Season the fish fillets or steaks with salt, pepper, and other desired seasonings before baking.
  • For a crispy crust, brush the fish with melted butter or olive oil before baking.
  • Bake the fish at a high temperature (400 degrees Fahrenheit or higher) for a short period of time to prevent it from drying out.
  • To test if the fish is cooked through, insert a fork or toothpick into the thickest part of the fish; it should flake easily.
  • Serve the baked fish with your favorite sides, such as rice, vegetables, or salad.

Conclusion:

Baked fish supreme is a quick and easy way to prepare a delicious and healthy meal. With a variety of seasoning options and side dishes, there are endless possibilities for creating a satisfying and flavorful dish.
