1 pound breaded cod, haddock or other white fish fillets
1 14.5-ounce can diced, fire-roasted tomatoes, not drained
2 tablespoons olive oil
1 tablespoon dried parsley

Steps:

  • Preheat oven to 400˚F.
  • Line a medium baking dish with a sheet of foil big enough to make a packet, about 12 to 14 inches long. Place fish in the baking dish and top with tomatoes, olive oil, and parsley.
  • Fold the sides of the foil inwards around the fish, and fold in the top and bottom of the foil. Pinch the foil closed to create a package.
  • Bake for 18-20 minutes or until fish is flaky and opaque. When cooked, open the packet carefully to avoid spilling the juices. Serve immediately.

1 tablespoon soy sauce, light
1 tablespoon lemon juice
1 teaspoon cornflour
1/4 cup sweet chili sauce
1 garlic clove, large, peeled and chopped
1 tablespoon coriander, chopped (optional)
1 carrot, medium
150 g green beans or 150 g asparagus, approximately
300 g fish fillets (cod, tarakihi, gurnard, snapper or salmon)

Steps:

  • Preheat the oven to 200° C with a baking tray in the centre of the oven.
  • Measure the soy sauce and lemon juice into a small bowl. Add the cornflour and mix until the are no lumps, then stir in the sweet chilli sauce, garlic and chopped coriander (if using).
  • Cut the carrot into thin julienne's and top and tail the beans or trim the asparagus spears and cut them diagonally into 5cm pieces. Place a 30x40 cm piece of baking paper (or foil) on a dinner plate (this stops the sauce running off) and place half the vegetables in the middle. Place one serving of the fish on top of the vegetables, then drizzle the stack with half the sauce. Fold up the edges of the baking paper (or foil) sheets and seal loosely with paperclips. Repeat the process on another sheet of paper or foil.
  • Carefully lift the parcels onto the hot baking tray in the oven, then bake at 200° C for 12 minutes. Remove the tray from the oven and allow the parcels to cool for a few minutes before serving with rice or noodles.

1 1/2 lb black cod (sablefish)
1 bunch asparagus, (trimmed)
2 whole zucchini, (cut in rounds)
6 baby red onions, (thinly sliced )
1 handful cherry tomatoes
3 cloves garlic, (pressed)
3 tbsp olive oil
1 tsp dried oregano
1 pinch salt and ground pepper, (to taste)
fresh cilantro
Lemon slices

Steps:

  • Pre-heat oven to 400F degrees.
  • Cut fish into four equal pieces. Set aside
  • In a small glass bowl whisk the olive oil, minced garlic, oregano, salt and pepper. Set aside
  • Cut 8 pieces of aluminum foil that is big enough to accomodate the fish and vegetable.
  • Place one piece of foil on the counter/ work surface. On the first layer add 5-6 asparagus spears. On top of the asparagus place 6 zucchini rounds. Place the fish on top of the zucchini. Top the fish with 2-3 cherry tomatoes, whole or halved.
  • Season each fish and vegetable packet with garlic oregano oil.
  • Top the fish with a second piece of foil. Fold both bottom and top foil pieces together tightly.
  • Place the fish packets on a sheet pan and bake for 18-20 minutes.
  • Carefully open fish packets away from your face, as it will release lots of hot steam.
  • Completely remove the top foil. You can either serve the fish in foil packets or slide the fish and vegetables onto a plate. Add a lemon slice and fresh cilantro to each packet

MEDITERRANEAN FISH PARCELS

250g baby new potato , scrubbed
1 tsp olive oil
2 x 175g/6oz firm white fish fillets, such as haddock or whiting
2 tsp sun-dried tomato paste or tomato purée
finely grated zest of 1 small lemon plus 2 tsp lemon juice
about 10 black or green olives
1 tbsp capers , rinsed
2 sprigs of fresh rosemary or thyme

Steps:

  • Preheat the oven to fan 170C/conventional 190C/gas 5. Boil potatoes in lightly salted water for about 12 minutes or until tender, then drain well.
  • Take 2 large sheets of foil, about 30cm square, and brush the middle area of each sheet with the olive oil. Put a fish fillet on top and spread with the tomato paste. Sprinkle with the lemon zest and juice, add the cooked potatoes, olives and capers and season with ground pepper.
  • Lay a sprig of rosemary or thyme on top then loosely wrap and secure each parcel tightly to completely enclose the ingredients. You can prepare these up to half a day in advance and keep them in the fridge.
  • Put the fish parcels on a baking sheet and bake for 20-25 minutes, or until the fish flakes when tested with a fork. Serve at once, with steamed green beans.

100ml shaohsing rice wine or dry sherry
100ml light soy sauce
1 small bunch of spring onions , finely sliced
2 garlic cloves , finely chopped
thumb-sized piece fresh ginger , finely chopped
4 sea bass fillets, scaled (about 100g each)
3 pak choi , each quartered
1 large carrot , shredded into fine strips
2 red chillies , 4 spring onions, and thumb-sized piece ginger, cut into fine strips, to serve

Steps:

  • In a jug, mix together the wine or sherry with the soy, spring onions, garlic and ginger, then set aside. Lightly score the skin of each sea bass fillet a couple of times.
  • Lay a square of foil on your work surface with a square of baking parchment the same size on top. Put 3 pak choi quarters just off centre of the paper and top with a quarter of the shredded carrot followed by a sea bass fillet, skin-side up. Spoon over a quarter of the ginger, onion and garlic mixture (don't add the rice wine and soy mixture yet). Fold over the parcel so it becomes a triangle, then, from left to right, begin to seal it by scrunching the edges together. Continue all the way around until there is just a little hole at the end. Pour a quarter of the soy mix through the hole. Scrunch the remaining bit to seal and place on a baking tray. Repeat until all the fish are wrapped, sauced and sealed. Can be prepared a day ahead and chilled.
  • Heat oven to 200C/180C fan/gas 6 and cook the fish on the tray for 15 mins. Remove from the oven and divide the parcels between four warmed plates. Let your guests open them up themselves so they get a hit of aromatic steam before they tuck in. Pass around some chilli, spring onion and ginger strips to sprinkle over.
