Time 1h

Yield 6 servings

Number Of Ingredients 7

8 ears corn (still in the husk)
2 red bell peppers, diced
2 fresh jalapenos, diced
1 cup heavy cream
1/2 cup milk
Salt and freshly ground black pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • Remove the corn from the husks. In a large, deep bowl, slice off the kernels of corn with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and creamy milk inside. (I do this inside the bowl because it goes everywhere if you cut it on a board.)
  • Add the red bell peppers, jalapenos, heavy cream, milk, salt to taste, a generous amount of pepper and butter and mix it well. Pour into a 9 by 13-inch baking dish. Bake until thoroughly warmed through, 30 to 45 minutes.

Tips:

  • Choose the freshest ingredients: The quality of your ingredients will greatly impact the flavor of your baked creamed corn. Use fresh, sweet corn kernels, ripe red bell peppers, and crisp jalapenos.
  • Don't overcook the corn: Overcooked corn will become tough and lose its sweetness. Cook the corn just until it is tender-crisp, about 5-7 minutes.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to evenly distribute the heat and prevent the corn from burning.
  • Don't skimp on the cream: Cream is what gives baked creamed corn its rich, luxurious texture. Use heavy cream or half-and-half for the best results.
  • Season to taste: Baked creamed corn should be seasoned with salt, pepper, and a pinch of cayenne pepper. You can also add other spices, such as cumin, paprika, or chili powder, to taste.
  • Top with cheese: A sprinkling of shredded cheddar cheese or crumbled blue cheese is a delicious addition to baked creamed corn.
  • Serve immediately: Baked creamed corn is best served immediately, while it is still hot and creamy.

Conclusion:

Baked creamed corn is a classic Southern side dish that is perfect for any occasion. It is easy to make, delicious, and versatile. Whether you serve it as a side dish for a holiday dinner or as a quick and easy weeknight meal, baked creamed corn is sure to be a hit.
