1 (12- ounce) bag cranberries, fresh or frozen
1 1/4 cups sugar
1/4 teaspoon ground cinnamon
Pinch nutmeg
1/4 cup bourbon, or more

Steps:

1 (12 ounce) bag cranberries
3/4 cup sugar
1 orange, zest of
1 orange, juice of
1 cup water
1/2 cup chopped pecans
1 pinch salt
1 pinch allspice

Steps:

  • Wash cranberries and pick over, removing any stems.
  • Place in pot with the sugar.
  • Zest the orange and add to mixture.
  • Juice the orange into measuring cup, and add enough water to make 1 cup. Add to mixture.
  • Add the salt and allspice.
  • Bring to boil, then reduce heat to simmer.
  • Simmer about 10 minutes until large bubbles stack up on each other.
  • Stir in chopped pecans and remove from heat.
  • Allow to cool, then refrigerate.

1 medium Brie cheese round (5 to 6 inches)
1/2 cup cranberry juice
1 tablespoon brown sugar
1/2 cup whole dried cranberries
1/2 cup toasted pecans, chopped
2 tablespoons honey
1/4 teaspoon ground cinnamon
One 17-ounce box frozen puff pastry (2 sheets), thawed
1 large egg, lightly beaten
Crackers, for serving

Steps:

  • Put the cheese in the freezer for 10 to 15 minutes to chill.
  • Bring the cranberry juice and brown sugar to a boil in a small saucepan and add the cranberries. Turn off the heat and let the cranberries plump for about 10 minutes. Transfer them with a slotted spoon to a bowl, add the pecans, honey and cinnamon and mix together.
  • Preheat the oven to 350 degrees F.
