BAKED CONFETTI DONUTS WITH EASY CHOCOLATE GLAZE

Baked Confetti Donuts with Easy Chocolate Glaze image

An easy, healthier donut recipe that's baked instead of fried.

Provided by Jessie

Time 40m

Number Of Ingredients 18

1 cup all-purpose flour (measured correctly by scooping and leveling)
1/2 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. kosher salt
1/4 tsp. ground nutmeg
1/4 cup milk
1/4 cup plain Greek yogurt
1 egg
3 Tbsp. unsalted butter, melted
3 tsp. vanilla extract
1/4 cup rainbow sprinkles
1 cup powdered sugar
4 Tbsp. cocoa powder
4 Tbsp. unsalted butter, melted
1 tsp. vanilla extract
4 Tbsp. milk
1/2 cup rainbow sprinkles

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, stir together flour, sugar, baking powder, baking soda, salt, and nutmeg. Set aside.
  • In a separate mixing bowl, whisk together milk, Greek yogurt, egg, melted butter, and vanilla extract.
  • Add the wet ingredient mixture to the flour mixture and stir until batter is just combined. It should look like thick cake batter.
  • Gently fold the rainbow sprinkles into your batter.
  • Grease your donut pan with cooking spray (I use a Misto spray bottle [affiliate link] with vegetable oil instead of store-bought cooking spray - healthier and more environmentally friendly!)
  • Spoon donut batter into a pastry bag with no piping tip (you could also use a plastic bag and snip off a corner with scissors).
  • Pipe donut batter into donut pan, filling each cavity a little more than halfway full.
  • Bake donuts at 350 degrees F for 10-12 minutes until lightly browned on top.
  • Remove donuts from oven and let them cool in the pan for 5-6 minutes, then turn them out onto a wire rack to finish cooling.
  • When donuts are nearly cooled, make the glaze.
  • Whisk powdered sugar and cocoa powder together in a medium mixing bowl.
  • Add melted butter and whisk it into the powdered sugar.
  • Whisk vanilla extract and milk into powdered sugar mixture until smooth. The glaze should be thick and shiny.
  • Dip the top of each donut into the glaze and return to the wire cooling rack (you may want to put a towel or plate under the wire rack to catch any drips of frosting). Top donuts with sprinkles while glaze is still wet.
  • Let the glaze set for 10-15 minutes or so, then serve and enjoy!

Time 50m

Number Of Ingredients 12

1½ cups all-purpose flour (180 grams)
¾ cup granulated sugar (150 grams)
2 teaspoons baking powder (8 grams)
½ cup whole milk (114 grams)
⅓ cup vegetable oil (67 grams)
3 tablespoons unsalted butter (42 grams, melted)
1 large egg (50 grams)
1 teaspoon pure vanilla extract (4 grams)
¼ cup rainbow sprinkles (48 grams, plus more for topping)
1 cup powdered sugar (113 grams)
2 tablespoons milk (28 grams)
1 teaspoon pure vanilla extract (4 grams)

Steps:

  • Preheat oven to 350°F. Grease a donut tin with nonstick spray. Set aside.
  • In a large bowl, whisk the flour, sugar, and baking powder together.
  • In another bowl, whisk the milk, vegetable oil, butter, egg, and vanilla together.
  • Pour the wet ingredients to the dry and mix just until combined.
  • Gently fold the sprinkles into the batter.
  • Divide the batter between the wells of the donut pan, filling each one with about ⅓ cup of batter. For ease, transfer the batter to a Ziplock bag, cut the corner off, and pipe the batter into each donut well. (If your donut pan has 6 wells, bake the donuts in batches.)
  • Bake for 16-18 minutes, or until a toothpick inserted into a donut comes out clean.
  • Transfer the donuts to a wire rack and allow them to cool completely before glazing.
  • While the donuts cool, make the glaze. In a small bowl, whisk the powdered sugar, milk, and vanilla together until smooth.
  • Dip the donuts into the glaze and garnish with sprinkles.

FLUFFY CAKE DOUGHNUTS

Fluffy Cake Doughnuts image

This recipe is very quick and easy to make. I have a donut pan, which is like a muffin pan, but has donut shaped holes rather than muffin shaped holes. These donuts are baked not fried, so they don't have so many calories. I mix up either a powdered sugar glaze or a chocolate icing to top these with. They can also be rolled in cinnamon and white sugar, but it doesn't stick very well. My husband likes them just plain. For a chocolate glaze, simply stir 1/2 cup melted chocolate chips into the glaze mixture.

Tips:

  • Be precise with measurements: Baking is a science, and precise measurements are crucial for successful doughnuts. Use a kitchen scale to weigh ingredients for accuracy.
  • Activate the yeast properly: Active dry yeast needs to be activated in warm water with a bit of sugar before using. This helps the yeast to grow and become active, which is essential for a good rise in the doughnuts.
  • Knead the dough properly: Kneading the dough develops the gluten, which gives the doughnuts their chewy texture. Knead for at least 5 minutes until the dough is smooth and elastic.
  • Let the dough rise twice: The first rise allows the yeast to work and the dough to double in size. The second rise, after shaping the doughnuts, gives them a chance to rise again and become light and fluffy.
  • Fry the doughnuts at the right temperature: The ideal temperature for frying doughnuts is between 350°F and 375°F. A lower temperature will result in greasy doughnuts, while a higher temperature will burn them.
  • Coat the doughnuts in a tasty topping: While still warm, coat the doughnuts in a topping of your choice, such as powdered sugar, sprinkles, or a glaze, for added flavor and decoration.

Conclusion:

These baked confetti doughnuts are an easy and delicious treat that are perfect for any occasion. They are light and fluffy, with a tender crumb and a sweet, festive flavor. With these detailed tips and the step-by-step recipe, you can easily make these doughnuts at home and enjoy them with your loved ones.
