1 ¼ cups light coconut milk
1 ¼ cups egg substitute
½ cup white sugar
1 tablespoon vanilla extract
½ cup sweetened flaked coconut

4 ½ cups frozen pineapple chunks
2 tablespoons butter
2 tablespoons dark rum
