CRISPY TARRAGON BAKED MAHI-MAHI

Crispy Tarragon Baked Mahi-Mahi image

The secret to keeping this baked mahi-mahi fillet really tender? It's the mayonnaise mixture (we suggest canola mayo, which is high in heart-healthy fats without any sat fat). And the tarragon-lime crust has a nice crispy contrast with a pop of herb and citrus freshness. Serve this low-carb, high-protein entrée over your favorite greens or salad.

Provided by Robby Melvin

Time 30m

Yield Serves 4 (serving size: 1 fillet)

Number Of Ingredients 9

Cooking spray
1/3 cup canola mayonnaise

1/4 cup panko (Japanese-style breadcrumbs)
2 teaspoons chopped fresh tarragon
1 teaspoon lime zest (from 1 lime)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 425°F. Coat a baking sheet with cooking spray. Stir together mayonnaise and shallot in a small bowl. Spread mixture evenly over mahi-mahi fillets to cover. Arrange fillets in an even layer on prepared baking sheet.
  • Stir together panko, tarragon, lime zest, salt, and pepper in a small bowl. Sprinkle mixture evenly over prepared fillets. Bake in preheated oven until panko is lightly browned and a thermometer inserted in thickest portion of fillets registers 140°F, 14 to 16 minutes.

I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

BAKED MAHI MAHI WITH CITRUS-SOY-SESAME SAUCE

Baked Mahi Mahi with Citrus-Soy-Sesame Sauce image

This Asian marinade is not only very flavorful but it's also amazingly flexible. You can spice it up by adding a little chili sauce, or make it sweeter with a little honey or orange juice or add ginger or garlic to enhance the flavor. Scramble recipe tester Jennifer Grosman said her son "Gave it 500 thumbs up! I loved the marinade and would have slurped it up with a straw." I use mahi mahi because it's sustainable and affordable but you can swap it for any fish, tofu, or chicken.

Provided by Jessica Braider

Time 40m

Number Of Ingredients 8

1 - 1 1/2 lb. mani mahi fillets or other thick fish fillets, (or use extra-firm tofu or boneless, skinless chicken)
1/4 cup reduced-sodium soy sauce (or use any variety) (use wheat/gluten-free, if needed)
1 Tbsp rice vinegar or rice wine vinegar
1 juicing orange (use about 2 Tbsp. juice, or use store-bought orange juice)
1/2 lime (juice only, about 1 Tbsp.)
1 tsp. sesame oil
2 scallions (dark and light green parts thinly sliced)
1 tsp. sriracha or Asian chili sauce ((optional))

Steps:

  • Put the fish in an 8 x 8-inch glass or Pyrex baking dish. In a large measuring cup or bowl, combine the remaining ingredients and pour them over the fish (or tofu or chicken), and flip with a fork to coat.
  • Let it marinate on the counter for 10 - 30 minutes if time allows (if time doesn't allow, proceed with the recipe).
  • Preheat the oven to 400 degrees. Bake the fish, uncovered, for 20 minutes until it flakes easily. Serve it immediately.

Asian-Style Baked Mahi Mahi image

Provided by Guy Fieri Bio & Top Recipes

Time 1h50m

Yield 4 servings

Number Of Ingredients 15

1 cup coconut milk
1/2 cup low-sodium chicken stock
1 teaspoon fish sauce
1 tablespoon lime juice
1 (2-inch) piece ginger, sliced into coins
1 serrano pepper, seeds removed and minced
1 tablespoon roughly chopped garlic
3/4 cup chopped fresh cilantro leaves, plus more for garnish
1/2 cup fresh Thai basil, chiffonade
4 (6-ounce) portions mahi mahi
1 leek, white part only, cleaned and julienned
1 red bell pepper, julienned
2 large carrots, peeled and julienned
1 lime, sliced into rings, plus 1 lime, cut into wedges, for garnish
1/4 cup chopped fresh cilantro, for garnish

Steps:

  • In an ovenproof non-glass baking dish (11 by 8-inch), combine the coconut milk, stock, fish sauce, lime juice, ginger, serrano, garlic, cilantro, and Thai basil. Add the fish, turn to coat, cover, and refrigerate for 30 minutes to 1 hour.
  • Preheat the oven to 325 degrees F.
  • Remove the fish from the marinade and reserve. Add the vegetables to a small ovenproof dish and cover with the marinade. Cover tightly with aluminum foil and place in the oven for 15 to 20 minutes.
  • Once the vegetables are cooked, drain the marinade/cooking liquid into a small saucepot and place over medium-low heat to reduce.
  • Pat the fish dry and strain as much liquid from the vegetables without damaging them. In the center of a piece of parchment, place 1/4 of the vegetables, top with 1 portion fish, and 1 slice fresh lime and fold the parchment around the fish and vegetables like a package. Secure with the kitchen string and place on a baking sheet. Repeat with remaining ingredients. Bake for 15 to 20 minutes.
  • Remove the packets to individual serving plates, cut open to reveal, and garnish with a sprinkle of fresh cilantro and a wedge of lime.

MAHI MAHI WITH CITRUS

MAHI MAHI WITH CITRUS image

Categories     Fish     Dinner

Yield 4 servings

Number Of Ingredients 7

2 tbsp extra-virgin olive oil
1 tbsp fresh lemon juice
1 tbsp fresh lime juice
1 garlic clove, minced
1/2 tsp dried thyme
4 (6 oz) skinless mahi mahi fillets, about 3/4 inch thick
Salt and freshly ground black pepper

Steps:

  • Whisk together oil, lemon juice, lime juice, garlic, thyme, and salt and pepper to taste. Place fish in a shallow dish, drizzle with citrus mixture, turn to coat, and marinate at room temperature for 10 minutes. Heat grill pan or nonstick skillet over medium-high heat. Add fish and cook 3 to 4 minutes per side. Serve hot.

Tips:

  • Select the freshest Mahi-Mahi: Opt for wild-caught Mahi-Mahi with a firm texture and vibrant color. Fresh fish will ensure the best flavor and quality in your dish.
  • Prepare the citrus marinade: Combine fresh citrus juices, herbs, and spices to create a flavorful marinade. The acidity of the citrus will help tenderize the fish while infusing it with a zesty taste.
  • Marinate the Mahi-Mahi: Allow the fish to soak in the citrus marinade for at least 30 minutes, or up to overnight. This step allows the flavors to penetrate the fish, resulting in a more flavorful dish.
  • Choose your cooking method: You can bake, grill, or pan-sear the Mahi-Mahi. Baking is a convenient and mess-free option that yields tender and juicy fish. Grilling imparts a smoky flavor, while pan-searing creates a crispy exterior.
  • Control the cooking temperature: Mahi-Mahi is a delicate fish that cooks quickly. Avoid overcooking to prevent it from becoming dry. Use a meat thermometer to ensure the internal temperature reaches 145°F (63°C) for a perfectly cooked fish.
  • Enhance the flavors with garnishes: After cooking, garnish your Mahi-Mahi with fresh herbs, lemon wedges, or a drizzle of citrus-infused olive oil. These finishing touches add a pop of color, aroma, and flavor to your dish.

Conclusion:

Baked Citrus Mahi-Mahi is a delightful dish that showcases the delicate flavor of Mahi-Mahi, complemented by the vibrant citrus marinade. With its tender texture, zesty taste, and healthy ingredients, this recipe is a perfect choice for a nutritious and delicious meal. Whether you prefer to bake, grill, or pan-sear the fish, the combination of fresh citrus, herbs, and spices creates a culinary experience that is both satisfying and refreshing.
