- Put the steak, cumin seeds, cinnamon stick, and bullion in a saucepan and cover with water.
- Bring to a boil and allow to simmer until the meat shreds easily with a fork.
- (this takes longer with tough cuts of meat) Remove meat from liquid, shred and put aside.
- Strain liquid and set aside.
- Spray a large skillet with non-stick spray and add onions and garlic.
- Cook until the onions are translucent.
- Add chili powder, cumin, cinnamon, and cayenne and mix in well.
- Add salsa, chilies, and shredded meat and combine.
- Measure 1/2 cup of the meat cooking liquid and add to the mixture-- allow to simmer until the liquid is almost all absorbed.
- Spray a 13x9-inch glass baking dish with non-stick spray--give it a fairly heavy coating of spray.
- Preheat oven to 450°F.
- Warm your tortillas.
- Lay out one tortilla put 1/6 of the mixture in the center and fold up the bottom end.
- Top with 1/6 of the shredded cheese.
- Fold the right side and then the left and roll up the chimichanga.
- Put seam side down in the glass dish-- fold remaining 5 chimichangas.
- Coat all the chimichangas with a very liberal coating of spray, and put dish into oven.
- Bake for 10 minutes and then carefully turn the chimichangas, spray again, and return the dish to the oven.
- After 5 more minutes turn the chimichangas once more, give them a good spray and return to the oven for 5 more minutes.
- When the chimichangas are crisp and golden brown they are ready for eating.
- Put them on plates and top with lettuce, tomato, beans, sour cream, guacamole, or salsa.

- 1. Heat skillet on stovetop on high heat with a drizzle of olive oil.
- 2. Place roast in pan.
- 3. Sear on both sides.
- 4. Place in slow cooker on high heat.
- 5. Slice onion and place on top of roast with garlic, the two packets of fajita seasoning and 1/2 cup water. Let cook for 4 hours or until you can shred the beef with a fork.
- 6. At that point, shred the beef. I find using two forks work the best.
- 7. Add the green chili and the chopped cilantro to a bowl.
- 8. Mix together with the beef.
- 9. Preheat oven to 400. Heat refried beans on the stove until they are heated and creamy and easily spreadable.
- 10. Warm soft taco shells in the microwave (about 30 sec, just until warm so the can be rolled).
- 11. Spray baking sheets with cooking spray.
- 12. Assemble chimis by spreading beans, cheese, beef mixture on tortilla shells then fold.
- 13. I fold them by folding the shell by a third.
- 14. Tuck in the sides.
- 15. Then folding them the rest of the way over. Eyeball how much of each to put on one shell, depending on how big your shells are.
- 16. Place on baking sheet seam side down. Using a pastry brush, brush the finished chimis with vegetable oil if you are using that or spray them with cooking spray if that is what you are using.
- 17. Place them in oven for about 15 minutes. Keep an eye on the bottom of the chimis. You don't want them to burn (depends on what kind of baking sheet you are using).
- 18. Take the chimis out of oven. Turn on the oven broiler. Top chimis with cheese.
- 19. Place them under the broiler for 2-5 minutes until cheese is bubbly. (Keep a close watch!! You don't want them to burn!)

- 1. Bring water to a boil. Once boiling, add the chicken. Simmer until chicken is cooked (about 20-25 min). Make sure to rotate the chicken occasionally to ensure even cooking.

- 1. In large skillet, brown ground beef and onions until beef is no longer pink. Drain well.
- 2. Stir in green chiles, tomato sauce, water, and taco seasoning packet. (If you are using your own taco seasoning, you probably won't need quite as much water. I used about 1/3 cup). Bring to a boil, then turn down heat and simmer for about 8 minutes, or until thickened. Stir in refried beans.
- 3. Preheat oven to 450 degrees. Line a rimmed baking pan with parchment paper or foil (spray foil with non stick spray). Spoon about 1/3 cup meat mixture onto tortilla. - Sauté the chopped onion, garlic, and mushrooms (if using) in olive oil until onion is soft.

- To put together the chimichangas, place about 3/4 to 1 cup of filling on a tortilla, fold the bottom over the filling, fold the sides in, then carefully fold/flip it over to close; repeat until you have as many chimichangas as you want to bake at one time.
- Place the chimichangas on a cookie sheet, brush each one with 1/2 teaspoon of olive oil, and bake at 400 degrees F for 15 minutes.
- Sprinkle each with grated cheddar, serve with extra sour cream, guacamole, and salsa, and enjoy!
- Makes 8 to 10 large chimichangas, depending on the amount of filling you put in each.

- Spray each tortilla lightly with PAM, then place each tortilla seam side down on baking sheet.
- Bake up to 15 minutes until golden brown, then using a spatula, flip each chimichanga over.
- Cook other side 4-10 minutes or until golden brown.
- Serve topped with salsa, sour cream, green onions & almonds.
BAKED CHIMICHANGAS
If served with rice and refried beans you will be rolling away from the table. I make these for tailgate parties at my house-keeps them full and happy!!!!!! Please note prep time does not include cooking the meat, which can be done a day in advance.

Steps:
- After stewing the meat on a crockpot or pan drain off liquid and reserve.
- Shred and chop meat-set aside.
- In a large skillet cook onion and garlic with just a touch of oil and cook until onion is just browning.
- Add the meat, chilies, oregano, salt and red pepper and cook on low for 10 minutes.
- Add adobo sauce if needed, you don't want a totaly dry mixture and you dont want it soggy.
- Warm tortillas in the oven so they are bendable.
- Lay out 3 or 4 at a time and slightly off center place some cheese and then about 1/2 a cup of meat mixture and fold envelope style.
- Place on a lightly greased cookie sheet-repeat.
- Lightly oil the tops and bake in a 425 oven for 20 minutes or a 375 oven for 35-40 minutes-your choice.
- With the juices from the cooked meat I make a spicy gravy to offer with this.
- When done remove from oven.
- Serve with condiments, spanish rice and refried beans.
- Believe me when I say you will roll away from the table!
- To Plate: Lettuce on the bottom, then chimichanga, then gravy, then guac and sour cream and salsa, then remaining condimednts sprinkled on top.
BAKED CHIMICHANGAS WITH GREEN CHILI CREAM SAUCE
I saw this recipe on a 2015 Southwest Cooking calendar. I tweaked it a little bit to avoid using prepared salsa. It is really good and reheats well. I serve this with a salad and Mexican rice! Enjoy

- 1. Make the filling: Heat oil in a large skillet and add chopped onions. Sauté 5 minutes over med heat. Add chicken, tomatoes, garlic, spices and water. Simmer for a few more minutes until most of the liquid is gone.
- 2. Place cheese in middle of tortilla and then top with about 1/2 cup of chicken mixture. Fold edges and then roll up. Place seam side down in a lightly greased baking dish.
- 3. Brush each chimichanga with melted butter. Place in a preheated 400 degree oven and bake for 20 minutes or until lightly browned.
- 4. Prepare sauce. While chimichangas are baking, in a small saucepan heat stock. Mix flour and half and half until well blended. Stir into stock and simmer until thickened. Stir in chilies, lemon and lime juice and salt and pepper. Top chimichangas with sauce when serving and add avocado slices and chopped tomatoes as garnish.
Tips:
- Use wonton wrappers or egg roll wrappers to make the chimichangas. Wonton wrappers are thinner and crispier, while egg roll wrappers are thicker and chewier.
- Be sure to seal the chimichangas tightly so that they don't come apart during baking.
- Bake the chimichangas at a high temperature so that they get crispy.
- Serve the chimichangas with your favorite dipping sauce, such as salsa, sour cream, or guacamole.
- You can also add other ingredients to the chimichangas, such as beans, rice, or cheese.
