1 cup dry bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon dried basil leaves
¼ teaspoon ground black pepper

3/4 cup panko or dried coarse baguette breadcrumbs
Cooking spray

Steps:

  • Preheat the oven to 450 degrees F. Mix the mustard, thyme, 1/2 teaspoon salt and the cayenne in a medium bowl. Add the chicken breasts and turn to coat completely; set aside. In a medium shallow bowl, combine the parmesan and panko. Dredge the chicken pieces in the panko mixture, coating evenly and heavily, and pressing the coating into the meat. 2-4 Tbsp olive oil
parmesan blend:
1 Tbsp garlic powder
1 Tbsp rosemary
1 tsp parsley flakes
1 tsp oregano
1 tsp seasoned salt
1/4 c shredded parmesan cheese

Steps:

  • 1. Preheat oven to 375 degrees.
  • 2. Place all ingredients of Parmesan Blend into small food processor. Blend very slowly and gently, just a couple of turns of the food processor until all ingredients are mixed well.
  • 3. Spray baking pan with cooking spray and place chicken in pan.
  • 4. Brush each piece of chicken thoroughly with olive oil. Sprinkle Parmesan Blend over chicken. Let stand for 5 minutes. This will increase the flavor of the ingredients.
