6 bone-in, skin-on chicken thighs
1 pound smoked pork sausage, cut into 2-inch pieces

1 pound rigatoni
10 ounces baby spinach

1 lb bulk sausage
1 c diced onion
2 14.5 oz cans of diced tomatoes with juice
2 clove garlic, minced
1 c shredded mozzarella cheese
1/2 c minced fresh parsley
1/2 tsp salt & pepper
1/2 c bread crumbs
1/2 c grated parmesan
2 Tbsp butter, plus more for buttering the baking dish

  • 1. PRE-HEAT OVEN TO 400F
