2 cloves garlic, crushed and finely chopped
¼ teaspoon crushed red pepper flakes, or to taste
6 skinless, boneless chicken breast halves
2 cups prepared marinara sauce
¼ cup chopped fresh basil
1 (8 ounce) package shredded mozzarella cheese, divided
½ cup grated Parmesan cheese, divided
1 (5 ounce) package garlic croutons

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Coat the bottom of a 9x13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
  • Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
  • Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

1 cup store-bought marinara
1/2 cup water
4 ounces penne
8 ounces boneless, skinless chicken breast, cut into 1-inch cubes and seasoned with salt
1 1/2 cup breadcrumbs (see note)
2 pinches of salt
2 pinches of black pepper
1 teaspoon dried Italian seasoning
3 tablespoons grated Parmesan cheese
Chopped parsley, for garnish

Steps:

  • Preheat the oven to 375°F. Pour the marinara into a 7-inch square baking dish (see note). Add the water and stir to combine it with the sauce. Add the uncooked pasta and stir it into the sauce so it's completely submerged. Nestle the chicken into the pasta and sauce ensuring that the pasta stays submerged. It's okay if some of the chicken is not totally covered with sauce.
  • In a small bowl, toss the bread crumbs with the salt, pepper, and Italian seasoning. Sprinkle the breadcrumbs in an even layer over the top of the pasta and chicken. Sprinkle the grated cheese over the top of the breadcrumbs.
  • Cover the baking dish with foil and bake the casserole for 35 to 40 minutes. Uncover the baking dish, turn the broiler on, and place the dish below it. Turn the oven to broil and broil the top of the casserole for a few minutes or until the breadcrumbs are golden and toasty. Let the casserole stand for a few minutes before garnishing with the parsley (if using) and serving.

1 (12 ounce) can chicken chunks, drained
1 cup shredded mozzarella cheese
2 cups marinara sauce
½ cup seasoned bread crumbs

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. I came up with this for my wife's corporate potluck lunch. She wanted Chicken Parmesan, but it was too difficult to feed 20 people the conventional way. Figured a casserole would work just as well. It did!

1 (16 ounce) package uncooked rotini pasta
1 pound skinless, boneless chicken breasts, cut into bite-size pieces
2 cups vegetable oil for frying
2 cups flour
4 eggs, beaten
2 cups Italian seasoned bread crumbs
2 tablespoons garlic powder
1 (16 ounce) package shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
1 ½ (32 ounce) jars marinara sauce
½ cup dry red wine (such as Sangiovese)
½ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C), and preheat an oven to 350 degrees F (175 degrees C).

Pour the red wine into the empty marinara sauce jar; cover and shake the jar, and empty the contents into the bowl of pasta. Stir to combine. Spread pasta mixture in a large casserole dish, and cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove the aluminum foil and sprinkle with the remaining 1/2 package of mozzarella cheese and 1/2 cup of Parmesan cheese. Return to the oven, and continue baking until the cheese has melted, about 30 minutes. Remove from the oven, and allow to rest for 5 minutes before serving. Serve hot.

Steps:
