QUICK BAKED CHICKEN PARMESAN

Quick Baked Chicken Parmesan image

In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

BAKED CHICKEN IN PARMESAN AND ROASTED GARLIC SAUCE

Baked Chicken in Parmesan and Roasted Garlic Sauce image

Baked chicken in a flavorful sauce. Reduced fat. Fresh herbs. Easy to make. What's not to like? After a short prep time you leave it in the oven until you're ready so its easy to deal with an erratic family schedule or tardy guests. Enjoy!

Provided by 3KillerBs

Categories     < 60 Mins

Time 1h

Yield 8 thighs

Number Of Ingredients 13

8 chicken thighs (bone in, skin removed)
olive oil (for browning)
2 tablespoons dry sherry
1 cup chicken stock (see note)
1 teaspoon fresh thyme
4 roasted garlic, cloves
1 cup milk
8 ounces cream cheese, softened
1/2 cup parmesan cheese, grated
salt (optional)
fresh ground black pepper
1 tablespoon fresh parsley, chopped
1 lb egg noodles, cooked according to package directions

Steps:

  • Preheat oven to 350°F.
  • Squeeze roasted garlic from the papery peels and mash well.
  • Heat olive oil in a large, heavy skillet then brown chicken thighs thoroughly over medium-high heat. Work in batches removing each batch to a 13X9 pan in the oven as they finish.
  • Reduce heat to medium. Deglaze pan with sherry.
  • Add chicken stock (see note), thyme, and the roasted garlic. Simmer 2 minutes.
  • Add milk. Add cream cheese in small blobs.
  • Bring to simmer, whisking in the cream cheese until smooth.
  • Add salt (if using), pepper, and parsley. Whisk in Parmesan until melted.
  • Pour sauce over chicken pieces and return to oven for about 1/2 hour or until chicken thighs are thoroughly cooked.
  • Remove chicken to a serving platter. Toss sauce with noodles.
  • Serve with a green vegetable (I recommend broccoli or an Italian vegetable mix), or a salad.
  • Note: If you don't have homemade chicken stock please use a quality soup base (I like Tones), rather than bullion, which is apt to be too salty when combined with the Parmesan.
  • Note: If you want a thicker sauce reduce the chicken stock to 1/2 cup.

BAKED CHICKEN PARMESAN DIP

Baked Chicken Parmesan Dip image

I love chicken Parmesan, and I love hot, baked dips, so it was only a matter of time before I did a hot chicken Parmesan dip. I would make this again even if it were hard to do, but luckily it's super easy. Unlike actual chicken Parmesan where that crispy breading gets soggy super fast, this goes over crunchy toast so the textural experience is probably even better. Serve hot, warm, or room temperature, with lots of crispy crostini.

1 pound skinless, boneless chicken breast halves
1 pinch salt and freshly ground black pepper to taste
1 pinch cayenne pepper, or to taste
4 tablespoons olive oil, divided
3 tablespoons cold water
8 ounces grated mozzarella cheese
8 ounces grated Monterey Jack cheese
1 ounce grated Parmigiano-Reggiano cheese
2 cups prepared marinara sauce
½ cup panko bread crumbs

2 tablespoons grated mozzarella cheese, or to taste

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Season chicken with salt, pepper, and cayenne.
  • Heat 2 tablespoons oil in a pan over medium-high heat. Cook chicken breasts in the hot oil until browned and just barely cooked through, about 6 minutes per side. Tips:

  • To ensure your chicken is cooked through, use a meat thermometer to check that the internal temperature has reached 165°F (74°C) before removing it from the oven.
  • If you don't have a meat thermometer, you can also check if the chicken is cooked by cutting into the thickest part of the breast. If the juices run clear, the chicken is cooked.
  • To make sure your chicken Parmesan is crispy, use a good quality breadcrumb. Panko breadcrumbs are a popular choice because they are large and airy, which helps to create a crispy crust.

  • To prevent the chicken Parmesan from getting soggy, don't crowd the baking dish. Make sure there is enough space between each piece of chicken so that the air can circulate and the chicken can cook evenly.
  • If you are using a store-bought marinara sauce, be sure to taste it before you use it. If it is too acidic, you can add a pinch of sugar to help balance out the flavor.
  • To make your own marinara sauce, you can follow this recipe: Homemade Marinara Sauce.
