1/2 tsp salt
pepper to taste
5 drops onion juice
6 slice bacon
1 Tbsp finely chopped parsley

Steps:

  • 1. Clean the chicken livers thoroughly in cold water. Pat dry with paper towels. Lay the livers on wax paper. Sprinkle with salt, pepper, and onion juice. Cut the bacon slices in half. 5 slice bacon, cooked
1/2 c onions, yellow, medium. sliced

1 pkg chicken livers
1 lb bacon slices cut in half
1/4 c brown sugar
1 can(s) sliced water chest nuts
1/2 c teriyaki sauce
1 c baking mix
2 tsp poultry seasoning
salt and peper to taste
cookig spray and toothpicks

Steps:

  • 1. rinse the chicken livers under cold running water and dry on paper towels.
  • 2. #1 (Rumaki style) Wrap each chicken liver and water chestnut slice together with a half of slice of bacon and put a tooth pick in it to hold it together. place in the teriyaki sauce to marinade while you bring the oven up to 350. spray a cookie sheet with nonstick spray and bake for 30 minutes
  • 3. #2 wrap each chicken liver in a 1/2 slice of bacon and then roll in brown sugar. Place on a cookie sheet sprayed with nonstick cooking spray, and cook in 350 oven for 1/2 an hour.
  • 4. #3 combine the baking mix and the poultry seasoning in a plastic bag and shake to coat the chicken livers. Cook on a cookie sheet sprayed with nonstick cooking spray for 39 minutes. Salt and pepper to taste. These are good with chicken gravy or just as they are.

1-2 container of chicken livers (usually 1.5lbs)
1lb bacon (any brand - do not use thick sliced)
2 Tbsp garlic powder
1 Tbsp onion powder
dash(es) salt & black pepper

Steps:

  • 1. Heat oven to 350*. Spray sheet pan with non-stick cooking spray or cover with parchment paper
  • 2. Drain and rinse chicken livers. Cut larger pieces into smaller pieces
  • 3. Place livers in a bowl, add spices, mix lightly to coat with spices
  • 4. Cut bacon in half
  • 5. Wrap one half of bacon around each liver, place on prepared pan. Lightly dust with garlic powder and black pepper. You do not need much salt for this dish!
  • 6. Cook for 15min and check them. Livers will be done when they are browned and bacon is browned and crispy. Takes about 45min altogether.
  • 7. Serve with a smokey BBQ or a rustic dijon style mustard.

He bakes his rumaki which leaves them still soft and moist when fully cooked rather than a hard, dry lump. My husband and I love this version and can make a meal of them! Since these marinate, you must start them early. Marinating time is not included in the preparation time.

1 lb chicken liver
1 lb bacon (your favorite)
1/4 cup soy sauce
2 tablespoons brown sugar
1 tablespoon Bourbon (optional)

Steps:

  • Wash and trim chicken livers; cut each in half. Cut bacon strips in half and precook strips halfway. This is important since otherwise they would not finish cooking in a timely manner when baked. Be sure not to cook the bacon till it is crispy or it will not wrap around the livers properly.
  • Wrap one bacon strip around each liver half. Some people also include a water chestnut half with the liver, but I do not.
  • Fasten bacon around liver with a toothpick.
  • In a bowl or large plastic storage bag, combine the soy sauce, brown sugar and bourbon, if used. Add the prepared rumaki and cover the bowl or seal the bag. Allow to marinate for 6 to 8 hours or two hours at the least. Drain well.
  • Arrange rumaki on a baking sheet with sides. Bake in a preheated 325 degree oven for 1/2 hour or until cooked as desired.

So this is a pretty common recipe but this is how I do it (which isn't fancy) and wanted to share this QUICK recipe with you. My family adores this and my mom is always in the kitchen as I make them, stealing as I get them on the plate.

2 pkg fresh chicken livers
2 pkg bacon
toothpicks
oil (enough to coat bottom of pan.)

Steps:

  • 1. Pre-Heat skillet at 250 (if using electric skillet) or medium (if using stove).
  • 2. Add just enough oil to coat bottom of pan.
  • 3. Wash and pat dry chicken livers. (If you have a large liver, cut in half.)
  • 4. Using a sharp knife, cut bacon in half while in package.
  • 5. Wrap each liver in half a slice of bacon and secure with toothpick.
  • 6. Place in an even layer in skillet and cover. (This allows the chicken liver too cook WHILE bacon stays soft.)
  • 7. Flip every so often and once the chicken liver is done (I use the old technique of grabbing the largest one and cutting it in half), turn up the heat and let bacon get to desired crispiness.
  • 8. Place on paper towel lined plate and let rest and drain to remove excess fat.
  • 9. Serve :D Hints If you like your bacon crispy, sear first and then cover on lower heat. Crisp up even more after chicken liver is cooked through. Cover a paper plate with paper towels and top that with ANOTHER paper plate covered in paper towel and let drain on them. This way you have one less dish to clean and doubling makes sure not to get any on your counter.
