PASSOVER BAKED CHICKEN AND STUFFING
I got this recipe from my sister Sheila, who found it in a local newspaper over 45 years ago. It has been our traditional Passover meal even before our children were born, and everyone expects it now when they come to the Seder. It is delicious and simple. We double and even quadruple it, depending on how many people are expected.

- Place the chicken on top of the stuffing and brush with melted fat (oil).
- Sprinkle with salt and pepper.
- Place in oven and bake for 1 to 1 1/2 hours or until chicken is nicely browned and tender.
- Suggestion: You can stuff the chickens if you wish and adjust the roasting time accordingly. If you do that, you can make extra stuffing and bake it following the original instructions.
Tips:
- Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
- Choose the right stuffing: There are many different types of stuffing you can use for this recipe, so choose one that you and your family will enjoy. Some popular options include cornbread stuffing, oyster stuffing, and herb stuffing.
- Don't overstuff the chicken: When you're stuffing the chicken, be careful not to overstuff it. This will make it difficult to cook evenly and may cause the stuffing to come out of the chicken.
- Roast the chicken on a rack: Roasting the chicken on a rack will help the air circulate around it and ensure that it cooks evenly.
- Use a meat thermometer: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the thigh and cook until the internal temperature reaches 165 degrees Fahrenheit.
- Let the chicken rest before carving: Once the chicken is cooked, let it rest for 10-15 minutes before carving. This will help the juices redistribute throughout the chicken and make it more tender.
Conclusion:
Baked chicken and stuffing is a classic comfort food that is perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. With a little planning and effort, you can create a delicious and memorable meal that your family and friends will love.
