2 onions, thinly sliced
1 cut-up chicken, (3 1/2 pounds in 8 pieces)
2 tablespoons vegetable oil
2 teaspoons coarse salt
1/2 teaspoon ground pepper
1 tablespoon paprika

Steps:

  • Preheat oven to 450 degrees. Place sliced onions and chicken pieces in a 9-by-13-inch baking dish or roasting pan. Drizzle with vegetable oil; season with coarse salt and ground pepper. Toss to coat.
  • Arrange chicken, skin sides up, on top of onions; sprinkle with paprika.
  • Bake, tossing onions and basting chicken occasionally, until juices run clear when chicken is pierced with the tip of a sharp paring knife, 35 to 40 minutes. Serve hot.

1 whole chicken (3 to 3 1/2 pounds), cut into 8 pieces and breasts halved crosswise
1 pound white new potatoes, halved (quartered if large)
1 large red onion, cut into eighths
1 head garlic, cloves separated and left unpeeled
6 sprigs thyme
1 lemon, quartered
1/4 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
Coarse salt and ground pepper

Steps:

  • Preheat oven to 450 degrees. Arrange chicken, potatoes, onion, garlic, thyme, and lemon in a 12-by-16-inch roasting pan. Whisk together oil and vinegar and drizzle over chicken and vegetables. ¼ cup lemon juice
½ cup white wine
4 skinless, boneless chicken breast halves

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.

This is a mixture of several recipes I've seen on this website, thanks to all the chefs who posted chicken recipes. The caramelized onions are and adaptation on someone else's onions, but I can't remember who right now (do tell if you know who you are).

1 small onion
3 chicken breast fillets
1/2 cup feta cheese, drained and crumbled
2 tablespoons flour
4 tablespoons dried rosemary (or 2 fresh if you are lucky enough to have it fresh)
2 teaspoons salt
15 black peppercorns
10 white peppercorns
50 g butter
4 tablespoons olive oil
1 cup very hot water
1 chicken stock cube (or use vegetable stock if you have it)
2 dashes Tabasco sauce
1 teaspoon Worcestershire sauce
1 teaspoon soy sauce
1 teaspoon sherry wine vinegar (or red wine vinegar)
1 teaspoon brown sugar

Steps:

  • Wash chicken breast fillets and pat dry, cut in half.
  • In a small pan heat butter and oil till liquid, set aside.
  • Take a large, heavy based, frying pan, heat and add 2 tbsp fat.
  • Fry chicken on a high heat until it has turned from its original rosy colour to white on both sides, remove from pan immediately, conserve the fat.
  • With a mortar and pestle take the rosemary, the salt, both types of peppercorns and the flour and crush everything together so you have a fine powder with a few sprigs of rosemary remaining, set aside.
  • Take the hot water and add the stock cube (use stock if you have any left from another day), add Tabasco, Worcestershire sauce, soy sauce, vinager and sugar set aside.
  • Heat oven to 350°F and place the remaining fat in an earthenware dish in the oven on a high shelf.
  • Re-heat the fat in the frying pan and when hot fry the onions on a medium heat until they "relax".
  • Turn the heat up to high and add 1/4 of the liquid, reduce until there is no liquid left, add another 1/4 of the liquid and repeat the process, finally add the remaining liquid and reduce again until all the liquid has evaporated, leave on a low heat for another 5 minutes, cover and set aside.
  • Take fried chicken and sprinkle with the flour mixture on one side.
  • Take the earthenware dish out of the oven and place the dusted side down in the fat, sprinkle the remaining mixture over the chicken.
  • Bake for 15 minutes (turn halfway).
  • Take crumbled feta cheese and crumble over the chicken.
  • Grill until the feta cheese has "set", so that its dry and slightly golden (feta does NOT melt, so don't sit around waiting for it to melt 'cus you'll get a very dry chicken).
  • To serve: re-heat the onions that have been steeping in their juices, and set up 3 pieces of chicken each with a"dollop" of onions in the centre.
  • Garnish with a sprig of rosemary (if you must garnish things).

I like the flavor of the soy, Worcestershire and garlic gives the chicken. And I love the way the peas caramelize in the oven. Over white rice this is delicious! You can use less peas but I always make extra since they always seem to disappear.

18 pieces chicken (I use drumsticks and thighs and wings)
1 cup white vinegar
8 cups water
3 tablespoons salt
2 teaspoons fresh ground pepper
1/4 cup Worcestershire sauce
2 tablespoons soy sauce
2 limes, juice of
1 tablespoon oregano
10 garlic cloves, smashed in a mortar and pestle (or finely chopped)
4 (15 ounce) cans sweet peas, drained
1/2 cup olive oil
1 onion, thinly sliced

Steps:

  • In large bowl soak chicken in water, and vinegar for about 10 minutes. Rinse well, trim excess skin and pat dry. This step is optional it's just how I clean chicken.
  • Place chicken in a large zip lock bag or large bowl. To chicken add 1/4 cup olive oil, 2 tablespoons salt (or to taste) and 1 teaspoons black pepper, garlic, oregano, lime juice, soy and Worcestershire sauce. Mix well, let marinade for at least an hour (overnight is best).
  • Preheat oven to 350 degrees f.
  • Place chicken skin side down in casserole dish large enough to leave some space between the chicken pieces. I bought one large aluminum tray. Pour remaining marinade over chicken. Bake for 20 minutes.
  • Meanwhile, place peas and onions in a large bowl. Season with 1 tablespoon of salt (or to taste) and 1 teaspoons pepper, and 1/4 cup of olive oil. Toss to coat.
  • After 20 minutes, remove chicken from oven and add the peas and onions. Turn chicken so that the skin side is up, and make sure the chicken is sitting on top of the peas so that the skin can brown. Raise oven temperature to 400 degrees and Cook for about 30 to 40 minutes or until chicken is fully cooked. I served this with my white rice recipe http://www.food.com/recipe/white-rice-503045.

I first had this at a friend's house and it's since become a staple part of my repertoire of recipes. It's another easy but delicious dish, and goes extremely well with the slow cook morrocan lamb dish on this site (#142446).

2 tablespoons olive oil
1 1/2 kg chicken thigh fillets, skinned and all visible fat removed (breast fillets could also be used, but don't over cook)
5 large brown onions
2 garlic cloves, chopped
2 tablespoons sumac
1/2 cup chicken stock or 1/2 cup water

Steps:

  • Preheat the oven to 170 degrees celsius (325 fahrenheit).
  • In a frying pan, heat half the oil until medium-hot. Cook the chicken in batches until all sides are lightly browned. Remove and set aside.
  • Add the remaining olive oil to the pan and cook the onions for 10 minutes or until golden. Add the garlic and sumac and cook for a furthr 2 minutes. Spook half the mixture into a deep baking dish and arrange the chicken pieces on top. Cover with the remaining onion, pour in the chicken stock and cover with foil.
  • Bake the chicken for about 1 hour. Remove the dish from the oven and allow to rest for 5-10 minutes. Season to taste and serve with couscous or rice.
