1 head cauliflower
2 eggs, beaten
2 tablespoons parmesan cheese, fresh grated (or Romano)
salt
pepper

Steps:

  • In a stainless steel vegetable steamer, steam the cauliflower for about 15 minutes, until tender.
  • When the vegetable is tender, remove it from the steamer, and place it in a casserole, with a cover, just large enough to hold the head. Pour the egg over the top of the cauliflower, add salt and pepper, and top with the cheese.
  • Bake, covered at 375 degrees for 10 minutes, or until the cheese has melted and the egg is cooked.

3 tablespoons olive oil
1 large head cauliflower, separated into florets
⅓ cup grated Parmesan cheese
salt and black pepper to taste
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Grease a large casserole dish.

2 tablespoons lemon juice
½ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons grated Parmesan cheese

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C).

1 large head of cauliflower, cut into floweretes
SAUCE:
4 Tbsp butter (1/2 a stick)
1/4 c all-purpose flour
1/2 tsp salt
1/8 tsp pepper
2 c milk
1/2-1 Tbsp regular or Dijon mustard, to taste
1 1/2 c extra sharp cheddar cheese, grated (6 oz. block)
TOPPING:
1 c soft fresh bread crumbs
1 Tbsp fresh chopped parsley
1/2 tsp paprika
2 Tbsp melted butter
pinch salt

Steps:

  • 1. Boil or steam cauliflower in water until just tender, about 6 to 8 minutes. Drain and set aside.
  • 2. Grease a 2-quart baking dish. Heat oven to 350°.
  • 3. In a medium saucepan, heat butter over medium heat. Add flour. Stir until smooth and just bubbly.
  • 4. Add salt, pepper, and milk. Cook the sauce, stirring, until thickened and bubbly.
  • 5. Add the mustard and cheese and continue cooking, stirring, until cheese is melted.
  • 6. Combine the cauliflower with sauce. Spoon into the prepared baking dish.
  • 7. Combine topping ingredients and sprinkle over the cauliflower mixture.
