CARRIE'S CATFISH LARUE
Something new to do with catfish besides deep frying it! A yummy blend of tomatoes and italian seasonings make this a mild fish dish. Great if you don't care for that sometimes overpowering catfish taste. For a stronger fish flavor, try making the sauce separately and serving over grilled catfish!

BAKED CATFISH FILLETS
These are sooo yummy! They taste almost like fried catfish because of the cornmeal, and come out nice and crispy on the outside and soft on the inside. The ranch dressing adds a real zing, too!

- Whisk wet ingredients together in a bowl and combine dry ingredients on a piece of wax paper.
- Spray a glass baking dish with Pam or olive oil.
- Rinse catfish in cool water and DRY THOROUGHLY with paper towels.
- Dip each catfish fillet in wet ingredients and dredge in breading to coat. Just a nice, light covering is enough. Don't try to completely cover in breading.

Tips for Perfect Baked Catfish Fillets:
- Choose Fresh Catfish Fillets: For the best flavor and texture, use fresh catfish fillets that are firm and have a mild, sweet smell.
- Pat the Fillets Dry: Before seasoning or cooking the fillets, pat them dry with a paper towel to remove excess moisture. This will help the seasonings adhere and ensure a crispy crust.
- Generously Season the Fillets: Don't be shy with the seasonings! Use a combination of salt, pepper, garlic powder, onion powder, paprika, and any other desired spices to create a flavorful crust.
- Use High-Quality Olive Oil: Opt for extra virgin olive oil for its superior flavor and health benefits. Brush or spray the fillets with olive oil to help them brown and crisp in the oven.
- Bake at the Right Temperature: Bake the catfish fillets at a high temperature (400°F or 200°C) for a short period (10-12 minutes) to ensure a crispy exterior and tender, flaky interior.
- Don't Overcrowd the Baking Sheet: Place the catfish fillets in a single layer on the baking sheet to ensure even cooking and prevent steaming.
- Make a Simple Horseradish Sauce: Combine sour cream, prepared horseradish, lemon juice, salt, and pepper to create a tangy and creamy sauce that complements the catfish perfectly.
