2 teaspoons vegetable oil (best to sub Olive or coconut oil instead)
2 garlic cloves, minced
1/2 onion, chopped
1 (12 ounce) bag frozen broccoli, defrosted
3/4 cup panko breadcrumbs
1/2 cup sharp cheddar cheese
1/3 cup parmesan cheese
2 eggs, beaten
salt or pepper

Steps:

  • preheat the oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil.
  • Heat the oil in a small pan over medium heat, add in the garlic and onions. Season with salt/pepper to taste. Sauté until onions are garlic are tender, set aside to cool.
  • Add the broccoli to a kitchen towel. Wrap the towel around the broccoli and squeeze out the extra moisture. Pour the drained broccoli into a large bowl, add the onion and garlic and mix gently.
  • To the same bowl, add the panko, the cheeses, eggs, and salt/pepper to taste.
  • Mix together and form into patties, place on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Flip and bake for another 15 minutes or until browned and crispy.

2 tsp olive oil
2 garlic cloves, minced
1/2 onion, diced fine
16 oz frozen broccoli, thawed, rough chop
1 c panko crumbs
1/2 c cheddar cheese, shredded
1/3 c parmesean cheese, grated
2 eggs, beaten slightly
salt and pepper

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a baking sheet with foil and spray lightly with non-stick spray.
  • 2. Heat oil and saute the onions and garlic until softened. Season with salt and pepper. Set aside to cool.
  • 3. Place the thawed broccoli in a kitchen tea towel and twist each end tightly to remove any excess water. In a bowl, beat the eggs and mix in the cheeses. Give the broccoli a rough chop.
  • 4. Add the broccoli, garlic, onions and Panko crumbs to the egg/cheese mixture and mix well.
  • 5. Form patties and place on baking sheet. (The mixture has a wet consistency at this point--you don't think they will hold together, but they do.)
  • 6. Bake for 15 minutes. Flip the patties over and cook for another 15 minutes.
  • 7. ENJOY! I can see dipping these in a garlic aioli, mayo/dill or ranch dressing if one was so inclined. Great grab-n-go snacks. Note: I've also added cauliflower and/or shredded zucchini...works just as well.
