The Black- Eyed Peas Baked Squash image

This is one of the many recipes from my grandmothers cookbook. She passed away in May of 2005 and I am recording her wonderful recipes for my family and the many generations that will follow. I hope you enjoy her recipes as much as we do. I have not made each one yet-so cooking time and servings may vary. Blessings from FOURMRANCHWIFE in Texas This one was from a newspaper clipping Nanny had saved- Black Eyed Pea is a restuarant in the South.

HONEY BAKED BLACK EYED PEAS (CROCK POT)

Honey Baked Black Eyed Peas (Crock Pot) image

This is from The Unwatched Pot. The recipe doesn't say whether or not to drain the beans. I'm guessing no. Are they still "baked beans" if they don't actually get baked?

I love this squash recipe served at the Black-Eyed Pea Restaurant. The recipe was posted in response to a request, but it's been a family favorite ever since it was posted in the local paper years ago. A true Southern favorite.

Tips:

  • Use dried black-eyed peas: Dried black-eyed peas are more flavorful and have a better texture than canned beans. Plus, they're more economical.
  • Soak the beans overnight: Soaking the beans overnight helps to soften them and reduce their cooking time. If you're short on time, you can quick-soak the beans by boiling them for 1 minute, then removing them from the heat and letting them soak for 1 hour.
  • Use a variety of vegetables: This recipe calls for onions, celery, and bell peppers, but you can add any vegetables you like. Some other good options include carrots, corn, tomatoes, and zucchini.
  • Season the beans well: Don't be afraid to add plenty of seasonings to the beans. Black-eyed peas have a mild flavor, so they can handle a lot of spices. Some good options include garlic powder, onion powder, paprika, cumin, and cayenne pepper.
  • Cook the beans until they're tender: The beans should be tender but still hold their shape. This usually takes about 1 hour and 30 minutes, but it may take longer depending on the type of beans you're using.

Conclusion:

Baked black-eyed peas are a delicious and versatile dish that can be served as a main course or a side dish. They're also a great source of protein, fiber, and vitamins. So next time you're looking for a healthy and flavorful meal, give this recipe a try.
