This is a recipe I had found years ago with a few changes. It has become one of my husband's favorites.

2 Tbsp olive oil
1/2 c chopped onion
1/3 c green pepper seeded and chopped
1 can(s) 20 ounces pineapple chunks, reserve juice
1 pkg wieners, sliced
2 Tbsp vinegar
2 Tbsp soy sauce
2/3 c light brown sugar
1/2 c ketchup
2 can(s) 1 pound each, baked beans, drained

Steps:

  • 1. Preheat oven to 350 degrees. Drain pineapple chunks, reserving juice. Set juice aside for now.
  • 2. In large skillet saute onion, green pepper, pineapple and wieners in olive oil until peppers and onions are softened and pineapple and wieners begin to brown slightly. Add reserved pineapple juice, vinegar, soy sauce, brown sugar and ketchup. Stir to combine well. Heat until mixture begins to bubble.
  • 3. Place drained beans in a 2 quart casserole. Pour vegetable/wiener mixture into casserole with beans. Stir well to combine.
  • 4. Bake in preheated oven 30-45 minutes. ENJOY!

I knew these beans had to be over the top, considering the fact that my DH asked for the recipe from a co-worker, who brought them to a potluck. They are! Take the time to use fresh pineapple, that is what takes them over the top. 5/4/08: I made this recipe using crushed pineapple, in juice (one 20-ounce can and one 8-ounce can). The beans were still good, but I think I prefer the fresh to the canned. It seems a lot of the natural sugars and flavor is lost when it is processed; to me, it changed the taste. Maybe I should have used more pineapple??

6 (15 ounce) cans vegetarian baked beans, in tomato sauce (do not drain)
1 cup brown sugar, firmly packed
1/2 cup ketchup
8 slices bacon
2 large onions
1/2 large fresh pineapple
salt & pepper, to taste

Steps:

  • Preheat oven to 300°F.
  • Cut off the top and bottom pieces of the pineapple. Stand upright; using a sharp knife slice off the rough outside peel and remove any eyes. Cut pineapple in half-lengthwise, store one-half for another use. Cut the other piece in half again. Lay each wedge on its side; with your knife at an angle, slice off, and discard the woody core.
  • Cut pineapple into small pieces and finely chop. Place into a large (non-metal) mixing bowl and set aside.
  • Quarter and thinly slice onions.
  • Cut bacon slices into 1/4 inch strips.
  • In a large skillet over medium heat; cook onions and bacon together until onions start to brown and caramelize and bacon is tender crisp. Remove from heat.
  • Into the bowl of prepared pineapple, add the beans, brown sugar, ketchup, and cooked onions and bacon. Stir to combine and season with salt and pepper.
  • Place mixture into a large baking dish.
  • Bake uncovered for 1 1/2 hours. Stir frequently. (about every 15-20 minutes).

3 16 oz cans pinto beans, drained
1 cup chopped red onion
1⁄2 lb cubed cooked bacon
1/2 cup chopped red bell peppers
1/2 cup chopped green bell pepper
1⁄2 cup pineapple chunks, drained
1/2 cup packed brown sugar
Lava bbq sauce (1/4 cup)
Luau smoked bacon bbq sauce (1/4 cup)
Pineapple juice, from the drained pineapple (1/4 cup)

Steps:

  • Add the peppers and onions to a saute' pan and cook until tender.
  • Mix the beans, bacon, pepper - onion mixture, and pineapple juice to a large pot. Stir to combine
  • Add the brown sugar, lava sauce and Luau bacon BBQ sauce to the mixture.
  • Stir to combine.
  • Cook on low for 2 hours stirring often. Add your pineapple chunks and stir to combine.
  • Cook for another 15 minutes to heat pineapple.

Variety can(s) beans-pineapple-brown sugar-bbq sauce-honey-meat-green pepper optional

Steps:

  • 1. In a large roasting pan mix (6) 16 ounce cans of Busch pork-n-beans with (4) 12 ounce cans of Dole pineapple chunks (one can of whole pineapple rings reserve) add the juice of 2 cans only - add 2 lbs. of cooked crumbled bacon...you can choose to use cocktail weiners or cubed ham. Than take a medium bowl & mix 1 1/2 cups of brown sugar-3/4 cup of bbq sauce-2/3 cup of honey mix well pour into the beans & blend well. Cook uncovered on 400 degrees in oven for 2 hours stirring once each hour than reduce oven to 350 & cook at this temperture for the remaining hour. When finished stir once more than add one can of whole pineapple rings that have been broiled lightly with brown sugar on top. Serve them on top of the beans so yummy :) Optional you can add green pepper if you like.
