BAKED SCALLOPS
The pan juices that are released from baking the scallops mix with creme fraiche and white wine to create a delicious garlicky sauce. Serve this gratin with crusty bread for dipping, or for a heartier dish, serve over thin spaghetti tossed in olive oil.

Steps:
- In a small bowl, combine the panko, butter, a pinch of salt and the Parmesan. In another small bowl, combine the thyme, garlic, lemon zest, a large pinch of pepper and the cream.
- Divide the bay scallops between two individual gratin dishes. Pour half the cream mixture over each dish, then sprinkle each evenly with the panko mix. At this point, the scallops can be wrapped and refrigerated for up to 24 hours or baked immediately. (Note: I think I'd wait to sprinkle on the panko mix until just before baking - I think it will get soggy otherwise),.
- Preheat oven to 400 degrees. Place the gratin dishes on a baking sheet and bake for 8 to 10 minutes, or until cream is bubbling all over and the crumbs are browned.

Tips:
- Choose fresh scallops: Look for scallops that are plump and have a slightly briny smell. Avoid scallops that are slimy or have a strong fishy odor.
- Rinse the scallops thoroughly: Before cooking, rinse the scallops under cold water to remove any grit or sand.
- Pat the scallops dry: After rinsing, pat the scallops dry with paper towels to remove excess moisture. This will help them brown better in the oven.
- Season the scallops simply: Scallops have a delicate flavor, so don't overpower them with too many seasonings. A simple combination of salt, pepper, and garlic powder is all you need.
- Cook the scallops until they are just opaque: Overcooking will make the scallops tough and rubbery. Cook them just until they are opaque throughout, about 10-12 minutes in a 425°F oven.
- Serve the scallops immediately: Scallops are best served immediately after cooking. They can be served as an appetizer or main course, with a variety of sides such as rice, pasta, or vegetables.
Conclusion:
Baked bay scallops are a delicious and easy-to-make seafood dish that can be enjoyed by people of all ages. With their delicate flavor and tender texture, scallops are a perfect choice for a special occasion meal or a weeknight dinner. So next time you're looking for a quick and easy seafood recipe, give baked bay scallops a try!
